Potato & Chickpea Curry

  • 1 onion, diced
  • 1 tablespoon garlic
  • 1 tablespoon curry powder, or to taste
  • 1 can coconut milk
  • 1 can chickpeas
  • 2-3 regular potatoes, depends on size
Sauté onion and garlic until onion is soft. Add curry powder, sauté a few more minutes. Add coconut milk, chickpeas, and potatoes. You can also add about 1/2 cup frozen green peas if desired. Let simmer for 45 minutes to one hour, until potatoes are soft.
