(adapted from a PETA recipe)
Pour into 9" piecrust.
- 1 1/2 packages soft silken tofu (about 16 ounces)
- 1 15 oz can pumpkin puree
- 3/4 cup sugar or granular equivalent
- 1/2 tsp salt
- 1 3/4 tsp pumpkin pie spice
(OR: use a bit larger quantity of spices in pumpkin pudding
Bake 375 degrees for 60 to 75 minutes,
or until a toothpick inserted in the center comes out almost clean,
or until it looks firm and is cracked in the center.
