Tabouli with Millet

Yes, here is one I like to eat. Although millet is not commonly used in taboilu, it is an easily digested grain that tastes good in this recipe:

  • Millet -- cook one half cup millet until soft. Set aside to cool.
  • 1 - 2 bunches of parsley
  • 2 bunches small scallions
  • a handful of mint leaves
  • 2 tomatoes
  • juice of one lemon
  • 2 - 3 Tbsp. extra virgin olive oil
  • salt to taste
Wash and chop vegetables finely (remove stems).

Mix all ingredients together.
