Grilled Okra

  • 1 quart salted water
  • 1 pound fresh okra, washed and trimmed
  • Ice water
  • 1/4 cup vegetable oil
  • 2 cloves garlic, mashed
  • 1 teaspoon ground cumin
  • 1/4 teaspoon salt
  • Cooked rice
In a 2-quart saucepan bring salted water to a boil.
Add okra; blanch for 1 to 3 minutes.
Remove okra from boiling water and plunge into a bowl of ice water to chill.

In a small bowl combine oil, garlic, cumin, and salt.
Remove okra from ice water, dry and place in bowl or large plastic bag.
Pour oil mixture over okra; toss to coat.

Place okra in center of cooking grate.
Grill 7 to 9 minutes, turning once during cooking time.
Serve with cooked rice.
Makes 4 servings.
