Christmas Tree Broccoli with Almonds and Garlic

Vegan main course accompaniment, Serves four

  • 60ml water
  • 300g fresh broccoli, long stalks trimmed
  • 80ml vegetable oil
  • 40g blanched almonds, sliced
  • 2 cloves garlic, crushed
  • 1 small onion, chopped
  • 6 - 8 cherry tomatoes
  • salt and freshly-ground black pepper to taste
Wash broccoli - don't shake off water.
Place the broccoli in a shallow, microwaveable dish.
Add water, cover with clingwrap, microwave on 100% power, five to six minutes.
Remove clingwrap, drain carefully and set aside.

Sauté the onion, garlic and almonds in oil until browned.
Add the broccoli and seasoning to the pan and cook over a high heat for 1 minute, stirring well.

Arrange the broccoli mixture in a tree shape in a shallow, oblong dish or serving platter.

Garnish with cherry tomatoes and serve.
