Savory Breakfast Bean Cakes

These are great for breakfast.
They have a kind of sausage test that meateaters like
Leftovers can be used for sandwiches. 

  • 2 cups cooked beans - kidney, read, black beans
  • 1 cup rolled oats - old fashioned style
  • 1 medium onion grated
  • 2tsp. sage
  • 1tsp. thyme
  • 1tsp. dijon mustard
  • salt and pepper to taste
Mush everything together in a bowl with your hands.
Form into small patties.
Recipe should make eight to ten.
Saute the patties in a little olive oil on both sides till brown.
About 5 minutes or so. Serve warm.

I make a simple sauce for them - soy mayo, a little ketchup, mustard, sweet pickle relish.
A little dab on each pattie and a bit of fresh herb on top of that.
Serve them with multigrain pancakes topped with fruit and soy yogurt.
It's a great breakfast.
