Spicy Long Beans and Tofu (Pad Tua Fak Yao)

  • 1 or more tblsp red curry paste
  • 2-3 lime leaves, torn into 3 or 4 pieces
  • 2 c long green beans, cut into 1" sections
  • 1 c firm tofu, cubed
In a heavy saucepan, heat a little oil and add curry paste and lime leaves.

Stir for about a minute to release flavours, then add beans.

Add 1/4 c water and turn heat to medium.

Cook, covered, stirring occasionally, for about 5 mins.

Watch that mixture doesn't dry out; add water as needed.

Mix in tofu cubes and cook about 2 more minutes.
