Stuffed Melon Jelly
from Felix Weber - Bavaria, Germany

serves 4

  • 1 small melon
  • 2 cups strawberries, washed and cut in quarters
  • 1/4 tsp sea salt
  • 450 ml water
  • 2-2 1/2 tbsp agar flakes
  • concentrated apple juice and/or malt syrup as sweeteners, to taste.
Cut the melon in half and discard the seeds.
Remove the flesh and cut it into small pieces.
Add the strawberries and salt to the chopped - up melon flesh, mix well and leave to marinade for 1 - 2 hours.

Drain the marinated fruit (saving the juice) and fill each half of the melon with the fruit pieces.
Bring the water to the boil, add the saved marinade juice and the agar flakes.Simmer for 7-10 minutes,until the flakes have completely dissolved.

Add the sweeteners to taste and pour this liquid mix into each half melon.
Chill in fridge until the 'jelly' has set.

Carefully cut each half melon into 2 and serve with your favourite ice cream or custard.
