Der Idee für die IVU kam von der Französichen Vegetarischen Gesellschaft, der erste Kongress wurde auf internationaler Ebene von der Britischen Gesellschaft und lokal von der Dresdner Gesellschaft mit Unterstützung vom Vegetarier-Bund Deutschlands organisiert. Seitdem gibt es eine Reihe von Welt-Kongressen, die überall in der Welt stattfinden. Siehe die vollständige Liste rechts. Die Internationale Vegetarier-Union ist eine Organisation, die keinen wirtschaftlichen Gewinn erbringt, und ist offen für alle, die den Vegetarismus unterstützen. Die IVU wird ausschließlich von VegetarierInnen geleitet. Jeder Einzelne, jede Familie oder Organisation, welche die Ziele und Zielvorstellungen der IVU unterstützt, darf Förderer der IVU sein, ungeachtet ob sie nun VegetariererInnen sind oder nicht. *Um Mitglied der IVU zu sein, wird Vegetarismus vorausgesetzt, wobei Vegetarismus als das Nichtessen von Fleisch, Geflügel oder Fisch oder deren Nebenprodukte, mit oder ohne Milchprodukte und Eier, definiert ist.* Das Ziel der IVU ist es, den Vegetarismus weltweit zu fördern. Um dieses Ziel zu erreichen, werden folgende Punkte verfolgt: - Die Gründung von lokalen, regionalen und nationalen Gruppen anzuregen und deren Zusammenarbeit untereinander zu unterstützen. - Sowohl Welt- als auch regionale Kongresse anzuregen, um die vegetarische Idee an die Öffentlichkeit zu bringen und um den VegetarierInnen Gelegenheit zu geben, sich gegenseitig kennenzulernen. - Beschaffen von Geldern zur Unterstützung von lokalen Gruppen, wo immer es nötig ist. - Die Forschung über alle Aspekte des Vegetarismus und die Sammlung und Publikation über Vegetarismus in jeder Art von Medien durch die IVU selbst und all ihren Mitgliedsgesellschaften zu fördern. - Den Vegetarismus bei zuständigen Gremien zu vertreten und für die gesamte Sache zu gegebener Zeit zu sprechen. Die Aktivitäten der IVU werden von der Vollversammlung geregelt, die auf jedem Weltkongress abgehalten wird. Zwischen den Kongressen hat der [Internationale Rat](https://ivu.org/international-vegetarian-union/resources/interviews/4287-members-council-contacts.html), dessen Mitglieder jeweils auf den Kongressen gewählt werden, die Verantwortung für den alltäglichen Ablauf bei der IVU.
