Quest’esperienza mi ha condotto ad una riflessione sul viaggio che mi ha concesso la meravigliosa opportunità di conoscere vegetariani di tutto il mondo. Quando, quattordici anni fa, mi proposi fermamente di seguire una dieta vegetariana, mi ritrovai in una situazione assolutamente unica. Avevo già iniziato a sperimentare la nuova alimentazione nel 1971, ma in quel momento, nel mio ruolo di cuoco professionista, ho cominciato a pensare a come avrei potuto preparare i pasti per i miei clienti con la stessa creatività ed emozione che provavo una volta e in che modo avrei potuto soddisfare le aspettative di coloro che avrebbero pagato per questo nuovo stile di cucina. Questa sfida mi obbligava anche a superare lo stereotipo della dieta vegetariana "tutta fagioli, riso e pane integrale". Le varietà di colori, sapori e di consistenze ricavabili dal regno vegetale sono quasi infinite e pressappoco in ogni paese esiste una tradizione di ricette vegetariane deliziose apprezzate da secoli. La mia cucina vegetariana si è gradualmente trasformata in vegana e, assieme allo chef Ron Picarski, autore di "Friendly Food" e di "EcoCuisine" (pubblicati da Ten Speed Press), ho iniziato a partecipare a competizioni culinarie nazionali ed internazionali. Il nostro obbiettivo era riuscire a preparare dei piatti vegani attraenti quanto qualsiasi portata della cucina tradizionale. Come risultato, vinsi la prima medaglia d'oro negli Stati Uniti per la presentazione di piatti saporiti e di pasticceria vegana, e la prima medaglia d'oro in assoluto conferita per una presentazione di soli piatti vegani alla prestigiosa "Olympiade der Köche" tenutasi a Francoforte nel 1992. Nel passato eravamo gli unici concorrenti vegetariani, mentre ora posso dire orgogliosamente di aver raggiunto almeno l’ obbiettivo della costante comparsa di piatti vegetariani alle più recenti esibizioni culinarie. Il numero di portate presentato al Summerfest va aggiunto ai più di mezzo milione di piatti preparati e serviti dal sottoscritto e dalle persone cui ho insegnato e con cui ho lavorato.
