L'idea dell'IVU si deve all'Associazione Vegetariana Francese, e il primo Congresso fu organizzato dalla British Society e localmente dalla Dresden Society con il supporto dal Vegetarier-Bund Deutschland. Da quella data sono stati organizzati i Congressi Mondiali in varie parti del mondo, vedi l'elenco completo a fianco. L'unione Vegetariana Internazionale è un'organizzazione senza scopo di lucro alla quale può associarsi liberamente ogni associazione che il cui scopo primario sia di promuovere il vegetarismo e la cui massima autorità sia conferita esclusivamente a vegetariani. Il ruolo di sostenitore IVU può essere attribuito a singole persone o famiglie o organizzazioni che sostengano gli scopi e gli obiettivi dell’IVU, indipendentemente dal fatto che essi siano vegetariani o meno. *Ai fini dell’inclusione tra i Membri IVU, il vegetarismo include anche il veganismo ed è definito come il non cibarsi di carne, pollame, pesce, ammettendo o meno l’uso di latticini e uova.* Lo scopo principale della IVU è la diffusione del vegetarismo in tutto il mondo. **A questo fine gli obiettivi basilari sono:** - **incoraggiare** la formazione di organizzazioni vegetariane e la cooperazione tra di esse. - **promuovere** [Congressi](https://ivu.org/international-vegetarian-union/resources/interviews/5974-italian-congress-index.html) Regionali e Internazionali per diffondere e sviluppare l'interesse nella causa vegetariana, e fornire ai vegetariani l'opportunità di incontrarsi. - **raccogliere** fondi per sostenere le associazioni che ne fanno parte, quando possibile. - **promuovere**, con l’ausilio di ogni mezzo di comunicazione, da parte dell’IVU stessa e di tutti i gruppi ad essa associati, la ricerca, la raccolta e la pubblicazione di testi su tutti gli aspetti del vegetarismo. - **Rappresentare** la causa vegetariana nelle sedi appropriate e parlare, quando lo si ritenga appropriato, a favore della causa globale. Le attività dell'IVU sono regolate dagli incontri generali dei Membri, tenuti ad ogni Congresso Internazionale.
