La idea surgió de la Sociedad Vegetariana Francesa, el primer Congreso fue organizado internacionalmente por la Sociedad Británica y localmente por la Sociedad de Dresde con el apoyo del *Deutsche Vegetarier-Bund*. Desde entonces, una serie de Congresos Mundiales han venido celebrándose en la mayoría de los continentes y, en 2008, la IVU volvió a Dresde para su centenario 38º Congreso. Desde 2012 estos destacados eventos globales han sido renombrados a 'IVU World Vegfest'. Miembros La IVU es una organización sin ánimo de lucro - *Miembro de pleno derecho* está abierto a cualquier organización no lucrativa cuyo objetivo principal sea promover el vegetarianismo y que esté dirigida exclusivamente por vegetarianos. - *Miembro Asociado* está abierto a cualquier organización no lucrativa que abogue por el vegetarianismo. - Un *Simpatizante* de IVU puede ser cualquier individuo, familia u organización que apoye los objetivos de la IVU, tanto si son vegetarianos como si no. La IVU define el vegetarianismo como una dieta de alimentos derivados de las plantas, **con o sin** productos lácteos, huevos y/o miel. - La IVU recomienda una dieta de alimentos derivados enteramente de las plantas, como la única forma de proporcionar un pleno beneficio para los animales, las personas y el medio ambiente. - La IVU no promueve el uso de ningún producto animal pero entiende que muchos vegetarianos incluyen productos lácteos, huevos o miel en sus dietas. - La IVU incluye a todos los tipos de organizaciones vegetarianas/veganas entre sus miembros a nivel mundial y trata a todos ellos con el mismo respeto y sin discriminación (más abajo). Para poner en antecedentes: 1. Ahora sabemos que los primeros en llamarse 'vegetarianos', en Inglaterra alrededor de 1840, consumían alimentos enteramente derivados de las plantas. 2. Desde 1847, la primera asociación vegetariana del mundo, en el Reino Unido, ha definido consistentemente 'vegetariano' como '**con o sin**' huevos o productos lácteos. Esto es todavía la visión más común en Occidente, conociéndose a quienes consumen ambos como ovo-lacto-vegetarianos. 3. Desde finales del siglo XIX, en la India la palabra 'vegetariano' se ha venido asociando comúnmente con la dieta tradicional Hindu/Jainista, que es 'con productos lácteos' pero 'sin huevos' (lacto-vegetariana). Esta visión es empleada por muchos hindús étnicos en todo el mundo. 4. Desde finales del siglo XX, la mayoría de las organizaciones de Norteamérica que se llaman 'vegetarianas' han estado promoviendo una dieta de alimentos enteramente derivados de plantas (esto es, **sin** productos lácteos/huevos). Desde su fundación en 1974, la North American Vegetarian Society se ha referido a esto como 'vegetariano total'. 5. Desde principios del siglo XXI, la IVU ha promovido el vegetarianismo **sin** productos lácteos ni huevos, pese a admitir que algunas organizaciones miembros tengan un enfoque distinto. Para alcanzar este fin los objetivos principales son: - **Fomentar la formación de organizaciones vegetarianas** locales, nacionales y regionales, y la cooperación entre ellas. - **Promover Congresos Vegetarianos tanto Mundiales como Regionales** para difundir y desarrollar el interés por la causa vegetariana y proporcionar a los vegetarianos la oportunidad de reunirse. - **Recaudar fondos para apoyar a las sociedades miembros** donde sea posible. - **Fomentar la investigación** de todos los aspectos del vegetarianismo y la recopilación y publicación, en todos los medios, de material relativo a todos los aspectos del vegetarianismo, por medio de IVU en sí misma y por todas las sociedades miembros. - **Representar la causa vegetariana** en los organismos internacionales apropiados y hablar en representación de la causa global cuando corresponda.
