Paella (With Gipsy Paella Variation)

Recipe by Margaret and Reba, presented at the Club on 3 Feb 2000.

Serves 6-8

Peel and coarsely cut the onion, and fry in the oil for about 2 minutes. Add the mushrooms, stir and cook another 2 minutes. Add the peas, Quorn, Mock Duck and sausages, and stir in. Add the rice, and mix well. Add the stock and seasonings, and stir. Cover pan, and cook on medium heat for about 20 minutes or until liquid is absorbed.

Gipsy Paella (Paella Gitana)

Use the above recipes, but omit the Quorn, Mock Duck and sausages. Substitute 500g mixed nuts of choice (eg pecans, pistachios and cashew nuts). Add optional other vegetables, such as peppers, red beans or diced pumpkin.
