Cashew Cheese Sauce

Recipe by Emma Biant, presented at the Club on 3 February 1999.

Blend smooth all but lemon juice. When smooth add juice and blend. Chilling will make sauce slightly thicker, water can be added for desired consistency. Can substitute other nuts and seeds, or use cooked rice or millet in place of nuts for less rich cheese. Use as dressing for salad or steamed vegetables, with pasta, potatoes and rice or over lasgna or pizza.
