#  Antoni Gaudi (1852-1926)

Antoni Plàcid Guillem Gaudí i Cornet was a Catalan architect. As far as I know he was a vegetarian mostly for health reasons.

The folllowing information its from the book “*Gaudi*” by Gijs van Hensberg, published by HarperCollins*Publishers*, 2001:

As committed vegetarians, Gaudi and his father were obsessed with fresh air, water and the special diet promoted by Dr. Kneipp. \[…\] One suspects that Gaudi diet sprang directly from the Judaic tradition of always leaving the stomach half empty to leave space for the Lord. Gaudí was, after all, a Franciscan at heart. \[…\] No more than lettuce, a splash of milk, or a dribble of olive oil, nuts, gently stewed chard stalks, and honey spread on bread was necessary to keep the body in health – along with unlimited water. (p. 122 – 123)

Gaudi’s pre-lunch ritual was an eccentric one. Having poured water in over his hands he dried them and then scrupulously scrubbed them clean with breadcrumbs. He clearly felt at ease.

‘From the first day I arrived in Mallorca I was treated so well I found it difficult to turn down anything that Doña Catalina offered me’ Gaudi later told Matamala. ‘She once offered me the choicest display of *embutidos* – cured meats. “You can eat it, Don Antoni,” she implored me, “I promise. It’s home-made and it’s *pure* pork!”

“Thank you, Doña Catalina,” I replied. “Unfortunately it’s the very purity that prevents me from eating it.”

Requesting dietary dispensation, Gaudí continued his usual salt-free diet of vegetables seasoned only with extra virgin olive oil. (p. 128)

Gaudí’s meagre lunches had often consisted of just a bowl of fresh lettuce leaves dipped in milk, finishing of later with a handful of nuts or sugared almonds. (p. 223)

But along with the pants, drawings, calculations and accounts came Santaló’s packets of medicine, which Gaudí refused to take, believing rather in the efficacy of his austere vegetarian diet. (pg. 226)

Martinell also relates a story of how Gaudí often carried a raw egg around in his pocket, as an instant snack, boasting its shell was the strongest form nature had to offer. He gave up the practice when Mayor Alberto Bastardas slapped him jovially after celebrating Mass, leaving the egg’s contents to dribble down his leg. Martinell, p. 14. (p. 292, note 19.)

Because of his rheumatism, the artist observed a strict vegetarian diet, used homeopathic drug therapy, underwent water therapy, and hiked regularly. Long walks, besides suppressing his rheumatism, further allowed him to experience nature.

Tal fuel a comida del gran arquitecto aquel domingo de diciembre.» (p. 108)  From Juan Bergós Massó*, “Gaudí, el hombre y la obra”*, universidad politécnica de Barcelona, 1974:  «Gaudí, de joven, había sido un gran gourmet, pêro nunca un glotón; en su madurez, primero por convencimento de la moda naurista, después para combatir los ataques reuméticos que reaparecieron algunas veces y finalmente por ascetismo, llegó a un grado de frugalidad extraordinário; de modo que un dia, paseando por la escollera, no pudo aguantarse, y comió excepcionalmente a deshora unas cuantas almendras crudas, diciéndome: «Siempre tengo hambre y no me há levantado nunca de la mesa harto». Decía que los que comen más de lo necessário, son unos hambrones que malgastan sus energias y comprometen la salud; «Hay que comer para vivir, no vivir para comer». Más tarde, temiendo que la exuberância física fuese en detrimento del espíritu, cambio esta cita clássica en: «Hay que comer y dormir lo justo para subsistir».  Explicaba que las ensaladas, la lechuga y la escarola, son la forma más sencilla y perfecta de tomar aceite preparado en su própria emulsión; que es un error que la leche com frutas, incluso cítricas, se digiere mal, ya que es todo lo contrario: la piel de las frutas es mejor regulador intestinal. Todo lo que comia lo acompañaba com pan y no bebia nunca, aunque no hubiera comido más que frutos secos; acababa siempre com una miga de pan, que hacía de «esponja limpiadora de la dentadura», después bebia un poço de agua, com la que se enjugaba ligeramente antes de tragarla.   Decía que abstenerse de los tóxicos excitantes y de las especias le agudizaba la sensibildad y le permitia percibir los olores y los sabores más delicados; que los frutos más exquisitos que había comido eran los albaricoques recién cogidos, obra maestra de aroma combinada com sabor, y que no había manera de conseguir que conservaran esta cualidades mucho tiempo. Notaba si la fruta había estado guardada, aunque fuese en câmara frigorífica, por la falta de aroma y también por la perdida de sabor; cuando no tenía fruta fresca, untaba un poço de miel sobre el pan; no tomaba azúcar.
