Die EPIC-Studie (EPIC=European Prospective Investigation into Cancer and Nutrition) ist eine großangelegte medizinische Studie mit dem Ziel, das gegenwärtig noch recht geringe Wissen um die Rolle, die Ernährung und andere Lebensgewohnheiten bei der Verursachung und der Verhinderung von Krebs und anderen lebensbedrohenden Krankheiten spielen, zu erweitern. Die Studie wird gleichzeitig in neun europäischen Ländern (Dänemark, Frankreich, Deutschland, Griechenland, Italien, Niederlande, Spanien, Schweden und Großbritannien) durchgeführt. Von etwa 400.000 gesunden Erwachsenen in diesen Ländern werden statistische Daten über Ernährung, Lebensgewohnheiten, Umweltfaktoren, Größe, Gewicht und Blutproben gesammelt. Bei den Teilnehmern an der Studie wird daraufhin das Auftreten von Krebs und Todesfällen überwacht. Insbesondere wird der Bezug zwischen Krebsfällen bzw. Todesfällen einerseits und Ernährung und biochemischen Faktoren andererseits überprüft. Die EPIC-Studie wird die größte bisher durchgeführte Studie dieser Art über Ernährung und Gesundheit sein. Sie dürfte viele Unklarheiten beseitigen, die heutzutage noch bezüglich des Verhältnisses zwischen Nahrung und Erkrankungen bzw. Todesfällen bestehen.

In den Teilnehmerländern werden verschiedene Gruppen von Menschen mit einem gleichen statistischen Faktor für die EPIC-Studie rekrutiert. In Großbritannien sind viele Teilnehmer an der Studie Vegetarier, die über Vegetarier- und Biokostvereinigungen, Bioläden und entsprechende Zeitschriften rekrutiert wurden. Dies läßt darauf schließen, daß sich das Interesse der Koodinationsgruppe beim Imperial Cancer Research Fund Cancer Epidemiology Unit in Oxford insbesondere auf den Vegetarismus richtet. Bisher wurden mehr als 35.000 Teilnehmer für die britische Gruppe rekrutiert, von denen etwa die Hälfte Vegetarier sind.

 Die ersten Ergebnisse, die bei den Teilnehmern der EPIC-Studie in Großbritannien gemessen wurden, wurden im British Medical Journal vom 28.09.96 in Form eines Leserbriefs veröffentlicht. Hierbei wurden der sogenannte Body Mass Index (BMI=Messung des relativen Gewichts in Bezug auf die Körpergröße) und die Fettleibigkeit von Männern und Frauen verglichen, die sich unterschiedlich ernährten. Es wurde nach folgenden Ernährungsformen unterschieden: Fleischesser, Fischesser (die kein Fleisch verzehren), Vegetarier und Veganer. Sowohl bei Frauen als auch bei Männern war der durchschnittliche BMI unter Fleischessern am höchsten, unter Veganern am niedrigsten und bei Fischessern und Vegetariern im mittleren Bereich. Daraus läßt sich schließen, daß Vegetarier in der Regel weniger wiegen als gleich große Nicht-Vegetarier.

Bei den Fleischessern litten 6,4% der Männer und 9,2% der Frauen unter Berücksichtigung altersbedingter Differenzen an Fettleibigkeit im klinischen Sinn (BMI über 30kg/m2). Diese Zahlen liegen zwar deutlich unter den Durchschnittszahlen für England (13,2% der Männer und 16,0% der Frauen im Jahr 1994), erreichen jedoch nicht die Ziele, die in der gesundheitspolitischen Zielsetzung der britischen Regierung gesteckt werden (Verringerung der Fettleibigkeit auf 6% bei Männern und 8% bei Frauen bis zum Jahr 2005). Im Gegensatz dazu lag die Anzahl der Fettleibigen bei den Testgruppen, die kein Fleisch verzehrten, deutlich unter diesen Grenzen, was die Vermutung nahelegt, daß eine fleischlose Ernährung mit einem geringen Auftreten von Fettleibigkeit zusammenhängt. Dies ist von Bedeutung, da Fettleibigkeit das Risiko erhöht, an bestimmten Krankheiten zu erkranken.
