**Expérimentation Végétarienne
 sur une Population de 3 millions**
 **Les effets d'une restriction de nourriture sur la mortalité à Copenhague pendant la Guerre**

Comme je l'ai déjà montré, le blocus mit les habitants du Danemark dans une situation très difficile. Nous importions plus de la moitié de nos céréales boulangères et une quantité considérable de mais et de tourteaux de lin pour le bétail. Pendant que le Danemark disposait seulement de la moitié de seigle et de pommes de terre par tête par rapport à l'Allemagne, le Danemark avait proportionnellement 2 fois plus de bétail. La raison de cet état avantageux était que le comité qui avait la charge de la répartition des récoltes entre humains et animaux (4 Avril 1917) était converti à des idées plus nouvelles sur la nutrition.

1. Aucune attention n'était prêtée au minimum protéique : il était entendu que le minimum pour l'homme était si bas qu'il ne pouvait être atteint, les calories étaient suffisantes du moment qu'elles étaient fournies.
2. Alors que la graisse était considérée comme un supplément très valable à l'alimentation, elle n'était pas considérée comme étant nécessaire.
3. Le son était considéré comme une nourriture très valable, une nourriture très digeste pour l'homme.

Comme les recherches ont aussi montré que l'homme peut rester en pleine forme un an ou plus avec une alimentation de pommes de terre et de graisse, et 6 mois ou plus avec une alimentation d'orge et de graisse, la confiance fut placée dans nos pommes de terre et la grande récolte d'orge fut fournie à l'homme, et non aux cochons comme par le passé, avec comme résultat que les cochons moururent d'inanition, mais que les gens reçurent une nutrition suffisante. En outre, nous mangions nous-mêmes tout notre son. Nous ne mangions pas seulement le pain de seigle complet, mais mélangions tout notre son de blé avec la farine de seigle et pûmes ainsi préparer du bon pain. Les Allemands étaient incapables de préparer du bon pain de seigle. Leur pain était trop aigre et trop humide. Nous étions heureux d'avoir plus de cent ans d'expérience dans ce domaine. Nos principaux aliments étaient : du pain au son, de la bouillie d'orge, des pommes de terre, des légumes verts, du lait et un peu de beurre. La production de porc était très faible, due à ce que les fermiers mangeaient tous les porcs qu'ils élevaient, et les habitants des grandes et petites villes ne possédaient que peu ou pas du tout de porc. Le boeuf était si cher que seuls les riches avaient les moyens d'en acheter en quantité suffisante. Il est donc évident que la plupart de la population vivait avec un régime basé sur le lait et les végétaux. Comme les pommes de terre et les plats d'orge n'étaient pas "au goût de M. Sorenson" (Expression danoise) au même niveau que la viande, "il" mangeait moins qu'avant et , en conséquence, souvent perdait du poids.

La réglementation alimentaire danoise était un problème des plus intéressant pour moi. Ce fut une expérimentation Basses Protéines à grande échelle, environ 3 000 000 de sujets disponibles. Quel fut le résultat ? Quel en fut l'effet sur la santé des gens ? Quel fut le taux de mortalité ? - Plus tard j'espère pouvoir dresser un rapport sur le taux de mortalité pour les 2 sexes, à différentes périodes de la vie et sur différentes maladies. Dans le tableau ci-inclus, je donne quelques données sur le nombre de décès pour 10 000 habitants de Copenhague, entre 25 et 65 ans.

Donc, mes calculs s'étendent sur une année commençant et finissant le 1er octobre. Je ne pu continuer mes études après octobre 1918, à cause de l'épidémie de grippe sévissant à ce moment. La mortalité, telle que connue, a baissé dans les dernières décennies, comme conséquence de la chute des cas de maladies épidémiques et de tuberculose. La cause de ces maladies étant connue, nous fûmes capables de les combattre avec succès. La mortalité pour toutes les autres maladies a été pratiquement la même depuis 1900 ou même avant.  En plaçant la moyenne, pour la période 1900 à 1916, à 100, la variation est faible, de 97 à 107, jusqu'à ce que la réglementation alimentaire intervint. Pendant l'année de réglementation sévère, elle tomba à 66 soit une baisse de 34 %. Il semblerait, alors, que la cause principale de décès est liée à la nourriture et à la boisson. Dans cette optique, il faut se rappeler que nous prenions les céréales et les pommes de terre des distillateurs et donc ils ne pouvaient fabriquer du brandy, et la moitié des céréales aux brasseurs, ainsi leur production de bière était réduite de moitié. Est-il possible que cette réduction de la production de boissons alcoolisées soit complètement responsable d'un taux plus bas de mortalité ? On ne peut pas répondre à cette question : mais au-delà du doute, bien que la baisse de la consommation d'alcool soit un facteur important d'un taux plus bas de mortalité, ce n'est pas le seul. Le taux de mortalité des femmes a été réduit de 17 %, pour les quatre années 1910-1914. Il est difficile d'imaginer que les femmes consommaient tant d'alcool que la baisse de la mortalité parmi les femmes soit à imputer exclusivement à une plus grande abstention de boissons alcoolisées.  Le taux de mortalité pour le Danemark, d'octobre 1917 à octobre 1918 fut de 10,4 pour 1000. Il n'a jamais été inférieur à 12,5 de 1913 à 1914. Une différence du taux de mortalité de 2,1 pour une population de 3 000 000 signifie 6 300 vie sauvées. En conséquence, le nombre de vies sauvées au Danemark grâce au blocus allié fut considérable.  Ce résultat ne fut pas une surprise pour moi. Depuis 1885, quand je commençai mes expérimentations avec un régime basses protéines (principalement végétarien), je fus convaincu que de meilleures conditions physiques résultaient de ce style de vie. On peut dire qu'un régime végétarien est un régime plus sain que le régime ordinaire. Comme résultat d'études intensives dans ce domaine, je suis convaincu que la suralimentation, conséquence de plats de viande savoureux, est la plus commune des causes de maladies. Je suis d'accord avec McCollum que  le lacto-végétarisme ne devrait pas être confondu avec le végétarisme strict. Le premier, quand le régime est correctement équilibré, est le régime le plus grandement satisfaisant qui puisse être adopté pour l'alimentation de l'homme ... Les seules combinaisons valables d'aliments naturels ou farines pour l'alimentation animale sont : (a) combinaisons de graines ou autres produits moulus, tubercules et racines, séparément ou mélangés, avec une quantité suffisante de verdure : (b) combinaisons des produits alimentaires énumérés précédemment (a), pris en parallèle avec une quantité suffisante de lait pour combler leurs déficiences.  Je souhaite attirer l'attention sur la quantité inhabituelle de son consommée par la population danoise pendant la période de restriction alimentaire. Dans les autres pays, par exemple : Allemagne, Norvège, Hollande, la question fut discutée si le grain devait être moulu au taux de blutage de 70, 80, 90, ou 94 %.  Nous ne moulions pas seulement notre seigle à 100 % mais, profitant des expériences précédentes, nous ajoutions tout notre son de blé au pain de seigle complet et comme nous ajoutions aussi 24 % de farine d'orge (moulu à 95 % seulement, l'écorce la plus grossière était enlevée), nous avions plus de deux fois la quantité de pain que nous aurions du avoir si nous avions moulu à 70 %. Comme la différence d'assimilation digestive était seulement de 9 % (94-85) nous obtenions deux fois la quantité de pain assimilable. Et, est-ce à souligner, nous pouvions cuisiner du bon pain avec cette préparation. Les gens ne faisaient pas de réclamations : ils n'avaient pas de troubles digestifs, mais nous sommes accoutumés au pain complet et savons comment fabriquer un tel pain, de bonne qualité. Si une preuve supplémentaire était nécessaire, cette expérimentation de guerre sur une si grande échelle a démontré que le son est un aliment excellent.  Ces résultats concordent avec ceux d'Osborne et Mendel. Ces chercheurs trouvèrent que le son est un très bon aliment pour les rats, et que mixé avec de la farine blanche il peut remplacer la viande et les oeufs. Leurs résultats me conduisent à conclure - si les résultats obtenus sur les rats peuvent s'appliquer aux êtres humains - que : comme le son peut remplacer la viande et les oeufs, l'homme devrait manger du pain complet et pas autant de nourriture coûteuse. Mendel conclut au contraire : comme les gens mangent assez de viande et d'oeufs *"aucun avantage pratique ne peut être attendu de ce résultat en transformant le grain entier en farine"*. Selon mon opinion, Mendel ne néglige pas seulement la question économique, mais aussi qu'il y a de bonnes raisons de croire qu'un régime composé principalement de viande, d'oeufs et de pain blanc - un régime communément idéal - est loin d'être un régime sain. Même dans le cas des rats, un régime carné semble éventuellement nocif. Bien que les rats peuvent tout à fait bien prospérer avec un régime carné - alors que l'homme ne le peut pas - les jeunes rats nourris de viande survivent rarement. Le fait de la question est qu'il est revendiqué que les rats, comme les êtres humains, ne choisiront pas un régime exclusivement carné, par instinct naturel. Cet argument ne s'applique cependant pas au rat. Watson dit, sur la base de ses nombreuses expériences de nutrition du rat :*"Je n'ai jamais vu un jeune rat qui s'intéressait au porridge ou au lait si de la viande était disponible. "* J'ai vu des rats 'humains' qui n'auraient pas mangé du porridge quand il y avait du beefsteak ! Et nous savons que le boeuf, en grande quantité n'est pas bon, autant pour l'homme que pour le rat.  Bien que tous les lecteurs ne seront pas d'accord avec ce que j'ai dit, personne ne peut contester le fait que les habitants du Danemark n'ont pas de raison de regretter que durant la guerre leur régime fut composé principalement de lait, végétaux et son. Si l'Europe Centrale avait adopté un régime similaire, je doute que quelqu'un soit mort de faim. Il me semble, malgré tout, que les scientifiques allemands, tel que Rubner, n'ont rien appris de la guerre. Rubner écrit au sujet de la *"nécessité d'amener les stocks de survie au-dessus des bases de ceux d'avant-guerre ...De ce que j'ai établi, il s'ensuit que les produits carnés doivent encore constituer une proportion adéquate de notre alimentation. "* Rubner veut une abondance de viande de manière à ce que les gens puissent être "aufgefüttert". Je ne suis pas d'accord avec lui. Les gens doivent avoir en premier du pain, des pommes de terre et du chou en quantité suffisante, et ensuite un peu de lait. La viande est le dernier besoin à satisfaire.
