#  Vegetarian News - Vegetarische Ernährung aus der Sicht von Präventivmedizin und Ernährungslehre

Jahrhunderts einen enormen Aufschwung, was 1889 zur Gründung der "Vegetarian Federal Union" (des Bundesverbandes der Vegetarier) führte. Im Jahre 1908 wurde der Bundesverband der Vegetarier von der Internationalen Vegetarier-Union (IVU) gefolgt, deren Anliegen es war, als Dachverband der vegetarischen Gesellschaften überall auf der Welt zu fungieren.   Seit Beginn der Bewegung des neuzeitlichen Vegetarismus sind zweihundert Jahre vergangen und nun sind wir im Begriff, das neue Jahrhundert zu sehen. Als Forschungskoordinator für den internationalen IVU-Rat möchte ich Ihnen die neuesten Informationen, veröffentlicht in den Neunzigern, präsentieren, welche das Thema vegetarische Ernährung aus der Sicht von Präventivmedizin und Ernährungslehre behandeln.   Inzwischen wird der vorbeugende Effekt vegetarischer Ernährung im Bezug auf Krankheiten bei Erwachsenen auch wissenschaftlich bestätigt.   Hier ein Auszug aus "Vegetarian Diets" (1997) der amerikanischen Ernährungsgesellschaft:   Wissenschaftliche Daten lassen eine deutliche Beziehung zwischen vegetarischer Ernährung und dem reduzierten Risiko verschiedener degenerativer Krankheiten und Bedingungen, einschließlich Fettsucht, Erkrankungen der Herzkranzgefäße, Bluthochdruck, Diabetes und einiger Arten von Krebs erkennen. Vegetarische Ernährungsgewohnheiten müssen, genau wie alle anderen Ernährungsgewohnheiten, genauestens geplant werden, um als ausgewogene Ernährung bezeichnet werden zu können.   **Stellungnahme**   Der Standpunkt der amerikanischen Ernährungsgesellschaft ADA ist, dass in angemessener Weise geplante vegetarische Ernährungsgewohnheiten gesund und wertvoll sowie der Gesundheit bei der Vorbeugung und Behandlung von Krankheiten dienlich sind.  Eine Autorität auf dem Gebiet der Ernährungswissenschaft, Dr. Med. P.H. Walter Willet, Professor und Vorsitzender der Abteilung für Ernährung an der Schule für Öffentliche Gesundheit der Harvard University, erwähnte die vegetarische Ernährung in der Hauptrede während des dritten internationalen Kongresses für vegetarische Ernährung in der Loma Linda University in Kalifornien 1997. In seiner Rede stellte Willet heraus, dass, obwohl die Vermeidung von rotem Fleisch bei der Ernährung für die niedrigere Rate an Herzkranzgefäß-Erkrankungen verantwortlich sein könne, sie kein Grund für die gute Gesundheit von Vegetariern zu sein scheine. Er erwähnte, dass die Quelle guter Gesundheit von Vegetariern vielmehr der ausreichende Verzehr einer großen Auswahl an pflanzlichen Produkten sei.  ---   **Etwa 375.000 Fälle von Krebs, errechnet an den aktuellen Krebsraten, könnten jedes Jahr durch ausgewogene Ernährung in diesem Land verhindert werden.**---  Währenddessen veröffentlichte das amerikanische Institut für Krebsforschung 1997 einen Bericht, "Food, Nutrition and Prevention of Cancer: A Global Perspective" ("Nahrung, Ernährung und Krebsvorbeugung: eine weltweite Perspektive"). Der Bericht enthielt vierzehn Vorschläge, von denen drei die vegetarische Ernährung betrafen. Auf einer Analyse von mehr als 4.500 Umfragen basierend, stellen diese Vorschläge den besten im Moment erhältlichen Rat dar, um das Krebsrisiko zu senken. Ein Teil der Vorschläge lautet wie folgend dargestellt:  - Wählen Sie vorrangig pflanzliche Nahrung aus dem großen Angebot an Obst und Gemüse, Hülsenfrüchten, und möglichst unverarbeiteten stärkehaltigen Grundnahrungsmitteln. - Essen Sie 400-800g bzw. fünf oder mehr Portionen Obst und Gemüse am Tag, das ganze Jahr über. - Essen Sie 600-800g oder mehr als sieben Portionen Getreide, Hülsenfrüchte, Wurzelgemüse, Knollengemüse und Wegerich. Bevorzugen Sie frische, nicht bearbeitete Produkte. Nehmen Sie möglichst wenig raffinierten Zucker zu sich.    Der Bericht erwähnte weiterhin auch das Potential in Sachen Krebsvorbeugung: - Richtiges Essen und ausreichend Bewegung sowie Normalgewicht können das Krebsrisiko um 30 bis 40 Prozent senken. - Die Ernährungsvorschläge zusammen mit Nichtrauchen haben das Potential, das Krebsrisiko um 60 bis 70 Prozent zu senken. - Etwa 375.000 Fälle von Krebs, errechnet an den aktuellen Krebsraten, könnten jedes Jahr durch ausgewogene Ernährung in diesem Land verhindert werden. - Eine einfache Veränderung, wie etwa die fünf empfohlenen Portionen Obst und Gemüse am Tag zu essen, könnten alleine schon das Krebsrisiko um mehr als 20 Prozent senken.    Im Bezug auf die Krebsvorbeugung veröffentlichten das "U.S. Department of Agriculture Dietary Guidance for Americans" und das "U.S. Department of Health and Human Services" im Jahr 1995 Ernährungsanleitungen für Amerikaner. In einem Kapitel mit dem Titel "Wählen Sie eine Ernährung mit vielen Getreideerzeugnissen, Obst und Gemüse" werden drei Punkte zu Pflanzenprodukten aufgeführt:  Getreideerzeugnisse, Obst und Gemüse sind Schlüsselstellen einer abwechslungsreichen Ernährung. Sie werden in dieser Anleitung hervorgehoben weil sie Vitamine, Mineralien, Kohlehydrate (Stärke und Ballaststoffe) und andere Substanzen enthalten, die für eine gute Gesundheit wichtig sind. Auch haben diese Produkte im Allgemeinen wenig Fett, abhängig von der Zubereitung und dem Hinzufügen von anderen Produkten in einer Mahlzeit. Die meisten Amerikaner aller Altersklassen essen weniger als die empfohlene Menge an Portionen von Getreideerzeugnissen, Obst und Gemüse, obwohl der Verzehr dieser Produkte mit einem wesentlich geringeren Risiko für viele chronische Krankheiten, einschließlich bestimmter Krebsarten, in Beziehung steht.   Der Großteil der Kalorien in Ihrer Ernährung stammt aus Getreideerzeugnissen, Obst und Gemüse.   **Pflanzliche Erzeugnisse enthalten Ballaststoffe**   Pflanzliche Erzeugnisse versorgen uns mit einer Vielfalt von Vitaminen und Mineralien, die wichtig für die Gesundheit sind.   Aus einigen Forschungsprojekten scheint ein Mangel an Vitamin B12 bei vegetarischer Ernährung hervorzugehen. Es wird jedoch als Tatsache angesehen, dass wenige Veganer in Japan an diesem Mangel leiden. Der Grund hierfür liegt wohl am höheren Verzehr von Algen. Im Jahr 1995 berichtete Dr. Med. Hideo Suzuki (Schule der Medizin an der Osaka-Universität) von der "J. Nutri. Vitiminol." in Japan, dass sich der Gesundheitszustand von Veganern (nach japanischer Art totale Vegetarier), die an einer Vergrößerung der roten Blutkörperchen litten besserte, nachdem sie zwei Gramm Nori (getrocknete Algen) am Tag einnahmen. In der Zwischenzeit hatten Dr. Med. P.H. Mitsuru Kakimoto 1990 und M. Ed. Yumi Watabe von der "J. Urban living und Health Ass." in Japan, Studenten befragt und herausgefunden daß vegetarische Studenten in physischer Hinsicht mit normalen Studenten verglichen werden konnten und dass die Nummer von Studenten, die an Verdauungsproblemen litten, bei den Vegetariern niedriger war als bei ihren Kollegen.   Die vegetarische Ernährung wird als effektives Mittel zur Vorbeugung von Krankheiten wie Krebs und Erkrankungen der Herzkranzgefäße anerkannt. Mehr noch, es ist offensichtlich geworden, daß die vegetarische Ernährung ohne jegliche Zusätze die Bedürfnisse von Kindern und Jugendlichen erfüllt, so lange ein gewisser Anteil von Nori verzehrt wird.   Mit dem Beginn des 21. Jahrhunderts werden wir nun mit Gesundheitsthemen, Nahrungsproblemen und Umweltzerstörung konfrontiert. Ich möchte behaupten, dass vegetarische Ernährung ein Lebensstil sein wird, der im nächsten Jahrhundert betrieben werden wird.  ---   Dr.Mitsuru Kakimoto ist der Präsident der japanischen Gesellschaft von Vegetariern (Japanese Vegetarian Society JVS) und ein Ratsmitglied der IVU.
