Contribuisce alla cicatrizzazione delle ferite ed è un componente fondamentale in molte reazioni enzimatiche. Lo zinco è fondamentale per il corretto funzionamento del nostro organismo. E' particolarmente importante per la salute della pelle ed è essenziale per mantenere in buona salute il sistema immunitario e per combattere le infezioni. ### Funzioni    Lo zinco svolge un'ampia gamma di funzioni. Ha un ruolo fondamentale nella crescita e nella divisione delle cellule, processi nei quali è essenziale per la sintesi delle proteine e del DNA, nell'attività dell'insulina, nel metabolismo delle ovaie e dei testicoli, e nel funzionamento del fegato. Come componente di molti enzimi, lo zinco è coinvolto nel metabolismo delle proteine, dei carboidrati, dei lipidi e dell'energia.   Il nostro corpo contiene circa 2-3 grammi di zinco. Il corpo umano non è in grado di creare depositi di zinco per cui è necessario un regolare apporto di zinco nella dieta. Lo zinco è presente in ogni parte del nostro corpo: per il 60% si trova nei muscoli, per il 30% nelle ossa, e per circa il 5% nella pelle. Concentrazioni particolarmente elevate si trovano nella prostata e nel seme. Gli uomini hanno bisogno di quantità maggiori di zinco rispetto alle donne perché la concentrazione di zinco nel liquido seminale è 100 volte superiore a quella misurata nel sangue. Perciò più un uomo è sessualmente attivo più avrà bisogno di assumere zinco. La quantità di zinco raccomandata per un maschio adulto è superiore di 1/3 di quella raccomandata per le donne.   I primi segnali di carenza di zinco sono una diminuzione del gusto, una risposta immunitaria debole e problemi di pelle. Altri sintomi di carenza di zinco possono comprendere perdita dei capelli, diarrea, stanchezza, difficoltà di cicatrizzazione, problemi di crescita e uno sviluppo mentale più lento nei bambini. Si ritiene che un'integrazione di zinco possa aiutare a combattere problemi di pelle come l'acne e l'eczema, problemi alla prostata, l'anoressia nervosa, e che possa essere di aiuto agli alcolisti e a coloro che hanno subito un trauma o un intervento chirurgico. È sempre meglio chiedere il consiglio di un esperto prima di assumere un integratore. Se decidete di prendere un integratore di zinco la dose non dovrebbe superare la quantità giornaliera consigliata se non diversamente prescritto dal medico. ### Fonti dietetiche    Lo zinco è presente in un'ampia varietà di cibi, in particolare nei cibi ricchi di proteine. Una dieta vegetariana spesso fornisce meno zinco rispetto ad una dieta a base di carne, per cui è importante che i vegetariani assumano molti cibi ricchi di questo prezioso minerale.   Buone fonti di zinco per i vegetariani sono i latticini i fagioli e le lenticchie, il lievito, le noci, i semi e i cereali integrali. I semi di zucca costituiscono uno dei cibi vegetariani a più alta concentrazione di zinco.   Solamente il 20% dello zinco presente nella dieta viene assorbito dall'organismo. Le fibre alimentari e l'acido fitico che si trovano nella crusca, nei cereali integrali, nei legumi e nelle noci, ne inibiscono l'assorbimento.   L'acido fitico forma con lo zinco un complesso altamente insolubile che l'organismo non è in grado di assorbire. I processi di cottura sono in grado di contrastare l'effetto negativo sull'assorbimento dello zinco esercitato dall'acido fitico e dalle fibre alimentari. La cottura è in grado di distruggere più della metà dell'acido fitico presente nel pane integrale. La carenza di zinco si verifica laddove un'ampia parte della dieta sia costituita da pane non lievitato come avviene in Paesi quali l'Iran e in altri Paesi del Medio Oriente. Anche livelli elevati di cadmio, un minerale tossico, possono impedire l'assorbimento di zinco perché questi due minerali risultano fortemente competitivi nel processo di assorbimento Per contro, livelli elevati di zinco nella dieta possono invece impedire l'assorbimento del cadmio. Anche altre sostanze chimiche che vengono aggiunte durante la lavorazione dei cibi, quali ad esempio fosfati e EDTA, possono ridurre l'assorbimento dello zinco. Una carenza di zinco nella dieta implica però un maggiore assorbimento dello stesso.   Lo zinco viene eliminato attraverso le feci, le urine, i capelli, la pelle, il sudore, il liquido seminale ed anche le mestruazioni.   **Fonti di zinco (per porzione)** |

Le madri che allattano hanno bisogno di una quantità extra di zinco nella loro dieta. Il latte materno contiene più di 2mg di zinco nei primi quattro mesi dell'allattamento e le donne necessitano di altri 6 mg al giorno per soddisfare tale aumentato fabbisogno. Gli integratori di zinco che vengono prescritti di routine per le donne incinte quando non c'è alcun segno di anemia possono compromettere i livelli di zinco. Ciò avviene perché le interazioni fra i minerali essenziali sono complesse e l'eccesso di uno può causare lo squilibrio di un altro.  L'eccesso di zinco è tossico. Troppo zinco interferisce con il metabolismo di altri minerali nell'organismo, in particolare il ferro e il rame. Sintomi di tossicità da zinco avvengono dopo l'ingestione di 2g o più e includono nausea, vomito e febbre. ### Pasto tipo   **Campione di un pasto giornaliero che soddisfa l'RNI di 9.5mg per un uomo adulto.** |
