#  Zinc

Ayuda a curar heridas y es un componente de vital importancia en varias reacciones enzimáticas. El zinc es necesario para un funcionamiento apropiado de muchos sistemas en el cuerpo humano especialmente para una piel sana y un sistema inmune fuerte y capaz de ofrecer resistencia a diversas infecciones.  ### Funciones  El zinc cumple una gran variedad de funciones y juega un papel de extrema importancia en el crecimiento y la división de células que se requiere para sintetizar proteína y ADN, actividad de insulina, metabolismo de los ovarios y testículos y función renal. Ya que se encuentra en varias enzimas, el zinc se encuentra presente en el metabolismo de proteínas, carbohidratos, lípidos y energía.  Nuestro cuerpo contiene entre 2 y 3 gr. de zinc. No se puede hablar de un lugar concreto en donde el cuerpo almacene el zinc y es por ello que ha de asegurarse un aprovisionamiento regular de éste. Como ya se ha mencionado, se encuentra repartido por todo el cuerpo. 60% en el músculo, 30% en los huesos y alrededor del 5% en la piel. En la glándula de la próstata y en el semen se encuentra cantidades especialmente elevadas.  Los hombres necesitan más cantidad de zinc que las mujeres ya que el semen contiene 100 veces más zinc del que se encuentra en la sangre. Cuanto más sexualmente activo se esté, mayor cantidad requerirá. Por lo general se recomienda 1/3 más para los hombres respecto a las mujeres.  Los primeros signos de deficiencia de zinc son la incapacidad degustativa, una respuesta inmune pobre y problemas con la piel. Otros síntomas podrían ser pérdida de pelo, diarrea, fatiga, dificultad en la cura de heridas y crecimiento físico y mental lento en niños entre otros.  Se cree que tomar un suplemento de zinc puede ayudar a mejorar condiciones tales como acné, eczemas, problemas de próstata, anorexia nerviosa, alcoholismo y problemas relacionados con la recuperación de un trauma o una operación. Sin embargo, en caso de que se decante por tomar un suplemento de zinc debería de buscar el consejo especializado de un experto y no suministrase las dosis que le venga en gana.  ### Fuentes dietéticas  Existe una gran variedad de alimentos que contienen zinc particularmente alimentos de alto contenido proteico. Una dieta vegetariana ofrece una cantidad de zinc inferior a una dieta que contenga carnes animales y es por ello que es especialmente importante para los vegetarianos consumir gran número de alimentos ricos en este mineral.  Buenas fuentes para los vegetarianos incluyen productos lácteos, legumbres, levadura, frutos secos y cereales integrales.  Las semillas de calabaza son una de las fuentes de zinc concentrado más aconsejables para vegetarianos.  Sólo un 20% del zinc presente en la dieta es absorbido por el cuerpo. La fibra dietética y el ácido fítico presente en los cereales integrales, legumbres y frutos secos inhibe la absorción de zinc. El ácido fítico forma un complejo insoluble con zinc que el cuerpo no puede absorber. El proceso de cocción puede reducir los efectos adversos del ácido fítico y la fibra en la absorción de zinc. Cuando se cuece un pan integral gran parte del ácido fítico presente se destruye. Si la mayor parte de la dieta se compone de pan sin levedar tal como ocurre en países tales como Irán y otros países de Oriente Medio, puede darse una deficiencia de zinc. Altos niveles del mineral tóxico cadmio también pueden impedir la absorción de zinc ya que ambos competirán por ser absorbidos. Es por ello que altos niveles de zinc en la dieta pueden evitar la absorción de cadmio. Diferentes sustancias químicas tales como los fosfatos y EDTA que se añaden a muchos alimentos procesados pueden reducir la absorción de zinc. Un déficit de zinc en la dieta conlleva que su absorción se vea incrementada.  La pérdida de zinc tiene lugar vía heces, orina, pelo, piel, sudor, semen y menstruación. Las mujeres que dan pecho a sus hijos necesitan más zinc también. La leche materna contiene sobre 2 mg de zinc en los primeros 4 meses y las mujeres necesitan 6 mg extra cada día para cubrir esos requisitos. Estas madres deberían de incorporar al menos una buena fuente de zinc diaria en su dieta.  Los suplementos de hierro que se prescriben de manera sistemática a todas la mujeres embarazadas incluso cuando no presentan síntoma alguno que indique anemia, puede poner en peligro el estado del zinc en el cuerpo. Esto se debe a que las interacciones entre minerales esenciales son complejas y un exceso de uno puede causar que se rompa el balance de otro.  Un exceso de zinc es tóxico e interfiere con el metabolismo apropiado de otros minerales existentes en el cuerpo, especialmente el hierro y el cobre.
