Las investigaciones nos han mostrado que los vegetarianos padecen en menor proporción de enfermedades del corazón, hipertensión, obesidad, diabetes, cánceres diversos, diverticulitis, desórdenes intestinales, cálculos en la vesícula, cálculos en los riñones y osteoporosis (Dwyer, 1988). Las dietas vegetarianas también han sido aplicadas para el tratamiento de diversas dolencias, entre ellas la artritis reumatoide y el síndrome nefrótico.  Dickerson y Davies (1986) estudiaron a grupos de vegetarianos y no-vegetarianos de características semejantes, con respecto a su salud general. Se encontraron con que los vegetarianos hicieron tan sólo el 22% de las visitas a consultas externas que los no-vegetarianos, y el tiempo de estancia en el hospital se redujo de manera similar.  Una dieta vegetariana sana  Una dieta vegetariana típica se ajusta de cerca a las recomendaciones dietéticas para una alimentación sana, establecidas por los expertos, siendo ésta baja en grasas saturadas y alta en fibra, hidratos de carbono complejos, y frutas y verduras frescas.  El informe del NACNE (Comité de Asesoramiento Nacional para la Educación en materia de Nutrición) en el Reino Unido, del año 1983, recomendaba una reducción en el consumo de grasas, particularmente grasas saturadas, y un incremento en la proporción de grasas poliinsaturadas sobre grasas saturadas. También se recomendaba un incremento en el consumo de hidratos de carbono complejos y fibra, y una reducción en el consumo de azúcar y de sal.  La Organización Mundial de la Salud (1990) ha recomendado igualmente una reducción en el consumo de grasas y un incremento en el consumo de hidratos de carbono complejos. También se recomienda aumentar el consumo de frutas, vegetales, cereales y legumbres.  Las indicaciones nutricionales de la Organización Mundial de la Salud, el informe del NACNE y otros organismos especializados constituyen las bases de las recomendaciones para una alimentación sana dadas actualmente por los profesionales de la salud.  Las dietas vegetarianas tienden a ser más bajas en grasas. Taber y Cook (1980) encontraron que los ovo-lacto-vegetarianos consumian una media del 35% de energía en forma de grasas. Un estudio de las dietas seguidas por un grupo de vegetarianos franceses mostró que consumían un 25% menos de grasas al día que los no-vegetarianos (Millet, 1989). Los vegetarianos también tienden a consumir proporcionalmente más grasas poliinsaturadas que saturadas, comparados con los no-vegetarianos. Los productos animales son la principal fuente de grasas saturadas en la dieta.  Las mejores fuentes de hidratos de carbono complejos y de fibras (también llamadas polisacáridos no almidonados o NSPs) son los cereales integrales, vegetales y legumbres, y las dietas vegetarianas tienden a ser ricas en estos nutrientes. Los productos animales no contienen fibra ni hidratos de carbono complejos.  Recientes investigaciones han demostrado la importancia protectora en la dieta de los nutrientes antioxidantes encontrados en las frutas y verduras frescas. Entre estos antioxidantes encontramos la vitamina A en forma de beta-caroteno, la vitamina C y la E. Muchos investigadores ahora creen que estos nutrientes tienen una importancia capital en la reducción del riesgo de padecer enfermedades crónicas como las enfermedades del corazón y el cáncer. Un alto consumo de frutas y verduras frescas es uno de los beneficios de las dietas vegetarianas.
