| **Increíble transformación**   Por JoAnne Schwab   de **[Toronto Vegetarian Association](http://www.veg.on.ca/)**Cuando estaba parada en una esquina o comprando en “Big Carrot”, escuchaba una voz que me decía: “¿Eres tú JoAnne? ¡Te ves maravillosa!”. Gracias, le decía.  “¿Cuánto peso perdiste?”  Setenta libras.  “¿Cuánto tiempo te demoraste en bajar de peso?”  Ocho meses.  Ahora que pienso esto, me doy cuenta de que la respuesta más cercana a la realidad es algo así como veinte o veinticinco años.  En mi juventud, comencé a notar que mis hábitos alimenticios me creaban peso extra. En ese entonces toda mi familia y yo éramos fanáticos de la comida chatarra. Mientras más calorías y grasa tuviera la comida, más la amábamos. Nada de cereales de trigo, tráiganme el cereal cubierto de azúcar, tráiganme los Hersheys, no la bolsa pequeña, la más grande.  ![JoAnne ](http://www.veg.ca/newsletr/janfeb97/janfebgraphics/joanne_before.jpg)Desde mi juventud hasta mis treinta años, me mantuve delgada por dietas en las que pasaba mucha hambre y cuando terminaba las dietas comía por montones. Muchos días de pasar hambre y muchos días de comer en gran cantidad me permitían mantener mi peso bajo. En los últimos de mis veinte años mi esposo y yo decidimos dejar Maryland y mudarnos a Nueva York. Al poco tiempo de vivir en Nueva York, en una pequeña escuela vimos una película que mostraba gráficas escenas de un matadero. Eso fue todo. Al día siguiente ambos nos volvimos vegetarianos. Al principio, éramos vegetarianos éticos sin ningún conocimiento sobre nuestra propia salud. Gradualmente como otras personas a través de lecturas, artículos y libros nos volvimos unos eruditos en este tema, y seguimos evolucionando paso a paso. Después de cinco años en Nueva York nos mudamos a Toronto y al poco tiempo de vivir ahí, nos unimos a la T.V.A. Esto fue alrededor del año 1984.  En 1986 mi esposo y yo formamos un grupo de derechos de los animales, Veganos Canadienses por los Derechos de los Animales. En ese momento yo lo intentaba, pero no podía mantenerme 100% vegana. Básicamente era una vegetariana que no comía nada sin leer su etiqueta primero: sin conservantes, sin azúcar, sin colorantes, sin harina y sin productos animales ocultos, por ejemplo: gelatina. Todo era perfecto excepto por una cosa, no podía mantenerme comiendo alimentos con bajas calorías y por los próximos quince años me mantuve con sobrepeso alimentándome sólo con comida 100 % sana, o al menos era lo que yo creía. Pero por algún motivo no podía parar de sobrealimentarme. Racionalmente pensaba que me estaba sobrealimentando de comida sana, así que no era tan malo. Me sentía orgullosa de saber todo sobre comida sana y comida chatarra. Tenía que saberlo, ya que mi esposo había sido por ocho años el productor y anfitrión de un programa de radio sobre los derechos de los animales, el medio ambiente y la salud, teniendo a todos los principales doctores del movimiento en su show. El organizó charlas con el Dr. Klaper y con otros doctores.  ---  *Acostumbraba a hacer bromas con la gente diciéndoles que yo era probablemente la única vegetariana con sobrepeso que conocerían.*  ---  Cuando teníamos mesas informativas, aunque yo tenía completo conocimiento de todas las razones por las que el vegetarianismo era saludable, nunca hacía ningún comentario, ya que no era el referente de una persona saludable. Acostumbraba a hablar sobre la ética y dejaba que mi esposo u otros voluntarios contestaran las preguntas sobre salud. Ahora puedo mirar atrás y ver todo claramente. Cuando dejamos de comer carne, el queso se convirtió en nuestro alimento básico. Finalmente cuando me convertí en vegana estricta y dejé de comer queso, parecía que todas las comidas que me gustaban tenían que llevar un montón de ACEITE - una vez más, sólo de presión en frío. El aceite provenía de la tienda de comida sana, así que no hacía falta racionarlo, sólo verterlo en la comida; venga, dame la botella, no seas tacaño. El aceite hace que tenga mejor sabor. Aquí estaba yo, ¡Una vegana con un elevado consumo de grasas y todavía con sobrepeso!  Finalmente hace un año, pude regresar a un peso saludable. ¿Qué cambió mi vida? No fue el conocimiento que la mayoría de nosotros finalmente va aprendiendo, acerca de comer todo lo que quieras siempre y cuando sea bajo en calorías. Era el nuevo y maravilloso giro en el mercado de los alimentos, que ha hecho de la comida baja en calorías algo delicioso, nutritivo y fácil de comer.  Si la gente empezaba a comer alimentos bajos en calorías hace diez años atrás, no tenían nada que comer excepto comidas insulsas y sin sabor. Los pocos que sabían y comprendían que las grasas, incluyendo los aceites, deben usarse en poca cantidad, tenían que pasar horas cocinado todo desde cero. La mayoría de las compañías de alimentos no consideraban la importancia de la limitación de grasa.  En la actualidad somos afortunados de tener cientos de deliciosos y nutritivos alimentos para escoger. Tenemos libros de cocina y recetas, no sólo de revistas como “Vegetarian Times” que siempre incluye una lista de recetas bajas en grasa (ahora tienen otra revista en los kioscos llamada “Low-fat & Fast”), sino también en revistas y libros de cocina para todo el público. Por todas partes, ahora las compañías de alimentos ofrecen comidas bajas en grasa o sin grasa, que tienen un sabor que, como afirma la línea de comida baja en calorías Loblaws, “es demasiado bueno para ser verdad”.  #### ¿Eres un vegetariano con sobrepeso?  Incluso los vegetarianos o veganos delgados que consumen alimentos con muchas grasas corren el riesgo de desarrollar enfermedades cardiacas, cáncer de mama u otras enfermedades. He comenzado un grupo semanal de apoyo del Dr. Dean Ornish (en el área de Bloor y Yonge).
