#  ¿Ecologistas que comen carne?

 | **¿Ecologistas que comen carne? ¿Cómo puede ser?**   por *Lisa Rogers*   de **[Toronto Vegetarian Association](http://www.veg.on.ca/)**La lógica sugiere que si eres apasionado/a por el medio ambiente, entonces también eres vegetariano. No hay debate posible, cuanto más abajo comas de la cadena alimentaria, mejor es para el medio ambiente. Para aquellos que se preocupan por el calentamiento global, por la deforestación, por la desertificación, por la polución del aire y el agua, por la erosión de las tierras y por la destrucción de los bosques tropicales, una dieta basada en vegetales es la contribución personal más importante que se puede hacer para minimizar este tipo de desastres. Sin embargo, pregunta a algún grupo de ecologistas qué porcentaje de sus miembros o voluntarios son vegetarianos y la mayoría te dirán que no son muchos.  Hay varias razones de porqué podría pasar esto. Una razón posible empieza en el primer "Día de la Tierra". Merrit Clifton, vegetariano de nacimiento, periodista por largo tiempo y editor de la revista Animal People, empezó su carrera como periodista ambiental a los 15 años cuando cubrió su primer Día de la Tierra en 1970. En aquel entonces el Día de la Tierra tenía el foco en un acercamiento a una forma de vida centrada en la ecología. Este concepto fue un desafío para Washington D.C., Wall Street y para las instituciones ambientalistas.  Merrit recuerda que todos los involucrados en establecer la agenda en 1970, estuvieron de acuerdo en los tres fundamentos básicos para cambiar el estilo de vida para llegar a tener un planeta más sano. Uno de los fundamentos, que todavía nos es familiar, era el de reciclaje. Otro era el de usar energía renovable. El tercero, y al que ya no se le presta importancia, era dejar de comer carnes.  El objetivo no era solamente el de limpiar el agua y el aire, sino también evitar la polución en primera instancia. Todos los científicos que hablaron eran ya vegetarianos, y todos puntualizaron que no hay acción individual que pueda hacer más por salvar el agua, los combustibles fósiles, las tierras y los bosques, que abandonar el consumo de carne.   ![](https://ivu.org/images/legacy/history/spanish/trans/envirearth.jpg)  Según Merrit "las organizacionea ambientales formadas alrededor del primer Día de la Tierra se olvidaron del componente humano al dejar de lado el vegetarianismo para buscar popularidad, buscaron atención política entablando relaciones con los cazadores/conservacionistas, y finalmente dejaron que éstos fijaran la agenda. 19 años después, en el décimo Día de la Tierra, el movimiento ecologista había sido tragado por los viejos come-carne contra los que se oponía en un principio. Omitiendo una franca oposición al hecho de comer carne, también han dejado en claro lo poco profundo de su postura ambientalista".  Merrit nos da otro ejemplo de este tipo de entregas. Un eminente científico ambientalista, el entomólogo Ron Stecker, argumentó en Octubre de 1970 cuando estaba tratando de salvar el nuevo centro de reciclado de la Universidad de San José, que lo mejor que podía hacer la gente para reducir la cantidad de basura era convertirse en vegetariana.  En lugar de defender una dieta basada en vegetales, las siguientes generaciones de voluntarios del centro de reciclaje difundían que para ahorrar agua se debían poner ladrillos en los tanques de agua sanitarios, lo cual no funcionaba muy bien ni ahorra tanta agua como el hecho de comer frijoles en lugar de pollo frito.  Otra explicación para este descuido de los ecologistas es concerniente a la cobertura mediática en relación a los asuntos ambientales. Uno pensaría que en los asuntos que cubren el uso de pesticidas, el calentamiento global, etc, la prensa propondría el vegetarianismo como una opción para ayudar, pero no lo hacen. No se mencionan porque cuando un periodista, como Merrit, llama a las grandes organizaciones ambientales buscando una perspectiva bien informada, ninguna de ellas menciona el impacto abrumador de la producción de comestibles basados en carne.  Además, cada organización tiene sus propios mandatos, ya sea para salvar los bosques tropicales o reducir la contaminación de las aguas. Para lograr sus metas, necesitan tanto apoyo público como sea posible. Y piensan que abarcando el vegetarianismo limitarían drásticamente su mensaje, ya que una minoría de la población (aproximadamente un 4% en Canadá\*) es vegetariana. Sin embargo, al no abarcar el vegetarianismo limitan su impacto, ya que los bosques tropicales son muchas veces talados para la cría de ganado, destinado a los consumidores occidentales, y una porción muy importante de la contaminación del agua es debida a los residuos de los animales de cría y las bacterias, que paran en las aguas. Es una acusación bastante fuerte, sin embargo, porqué no mencionar la dieta cuando se sugieren acciones para ayudar al respecto. Los cambios ambientales deben empezar al nivel de los consumidores, pero esto no puede ocurrir si no están informados. Si los grupos ecologistas apoyaran al vegetarianismo tanto como como apoyan el consumo de carne los consejeros del sector cárnico y lácteo, entonces podríamos esperar un cambio verdadero en la forma de alimentación de la gente. Esto implicaría, a su vez, un mejoramiento importante en la salud de nuestro planeta.  Todos hacen lo mejor que pueden, basados en la información que tienen. Lo que me hace pensar que los ecologistas carnívoros no han sido bien informados y que si tuvieran una idea al respecto, adoptarían con gusto una vida vegetariana.
