#  Entendiendo las preferencias dietéticas

La necesidad de que nuestra dieta evolucione hacia una alimentación vegetariana se hace cada vez más urgente a medida que la población humana continúa ascendiendo hasta los diez mil millones de personas previstos a mediados del siglo XXI. La tierra, el agua y otros recursos naturales que son necesarios para producir carne se harán inevitablemente mucho más costosos. Se hará crecientemente necesario dedicar la tierra arable a cultivar vegetales que puedan ser consumidos directamente por los humanos. Un mejor entendimiento de la nutrición y fisiología vegana y vegetariana permitirá el desarrollo de pautas de tal forma que toda persona que elija nutrirse con alimentos vegetarianos pueda hacerlo con una salud óptima.  Durante los últimos diez años, la experiencia clínica y la investigación en laboratorios han subestimado el concepto de individualidad biológica. Tengo un gran interés por averiguar por qué algunas personas parecen sentirse mejor con una dieta vegetariana pura (vegana), mientras otros tienen dificultades en seguir esa dieta (la teoría del grupo sanguíneo no está suficientemente probada- ver artículo en la edición Enero/Febrero 1999). ¿Tienen los humanos necesidad metabólica de comer la carne de otros animales para una salud y funcionalidad óptimas? ¿Hay elementos de identificación físicos o de laboratorio que puedan identificar a las personas especialmente adaptadas (o no) para alimentarse con dietas vegetarianas? ¿Pueden ser identificados y apropiadamente reemplazados los nutrientes de dietas formadas por alimentos de origen animal por los nutrientes de alimentos de origen vegetal?  ***'¿Por qué algunas personas se sienten mejor con una dieta vegetariana mientras otras dicen que lo intentaron pero no se sentían muy bien?.'***  Pienso que debemos reunir tanta información fiable como sea posible. En el Instituto para la Educación y la Investigación Nutricionales (Institute of Nutrition Education and Research), vamos a llevar a cabo una investigación nutricional en profundidad y a largo plazo sobre los efectos de las dietas veganas en la salud. La investigación consistirá en llevar un registro, haciendo el seguimiento de miles de veganos durante muchos años de cara a documentar la evolución de su salud, así como estudiar las causas de la incidencia de enfermedades y la mortalidad. Llevaremos a cabo tests no invasivos de sangre, orina, saliva, etc., de voluntarios que sigan dietas veganas, vegetarianas y omnívoras con el fin de explorar aspectos clave en fisiología y nutrición veganas. Estos aspectos incluyen necesidades de proteínas, equilibrio mineral, frecuencia de tipos sanguíneos, metabolismo de los ácidos grasos, función de la carnitina, estado inmunológico y otros muchos aspectos críticos.  ¿Te has preguntado por qué algunas personas parecen sentirse mejor con una dieta vegetariana mientras otros dicen que intentaron ser vegetarianos pero no se sentían muy bien? Cuando estas personas añadieron un poco de carne a su dieta se sintieron mejor. ¿Están estas personas genéticamente predispuestas a comer carne o existe otra explicación? Ofrezco algunas posibilidades...  En el Instituto para la Educación e Investigación Nutricionales reconocemos que hay diferencias metabólicas significativas entre las personas. Puede ser que algunas de estas diferencias puedan impulsar a ciertas personas hacia el consumo de carne. Puede ser sin embargo que la causa no sea tanto genética como adquirida tras el nacimiento. Virtualmente todas las personas que dicen volver a comer carne tras una dieta previa vegetariana son personas que crecieron alimentándose con una dieta basada en la carne.  El tipo de comida que uno come en los primeros años de la vida puede marcar pautas bioquímicas que duran toda la vida. Por ejemplo, el cuerpo humano puede sintetizar a partir de moléculas simples algunas sustancias esenciales como la carnitina (necesarias para la producción de energía) y algunos ácidos grasos de cadena larga (e.g. EPA, DHA, etc., necesarios para el funcionamiento hormonal, síntesis de membranas, etc). Las personas que comen carne ingieren estas sustancias. Puede ser que un omnívoro de toda la vida llegue a ser funcionalmente dependiente de una dieta que contenga estos nutrientes preformados. Como adultos, si adoptan repentinamente un modo de vida vegetariano, en que los alimentos están desprovistos de carnitina preformada, EPA, DHA, etc., pueden encontrarse en la situación de que son incapaces de sintetizar todos los compuestos generadores de energía, ácidos grasos y otras moléculas que puedan necesitar.  Después de meses o años de una dieta sin carne estas personas podrían experimentar un deterioro de su salud o energía, solamente para mejorar al reanudar el consumo de carne. Esto podría parecer una confirmación de que son comedores de carne naturales. Sin embargo puede ser evidencia de una dependencia adquirida de nutrientes presentes en la carne formada a través de los hábitos nutricionales tempranos. Si este es el caso, puede ser posible prevenir, reparar o por lo menos compensar estos desequilibrios mediante la provisión de nutrientes adicionales, la eliminación de sustancias inhibidoras en la dieta, variación de combinaciones de alimentos, etc., utilizando alimentos de origen vegetal o gradualmente eliminando la carne de su dieta. De acuerdo con mi experiencia estos problemas no se presentan en niños alimentados con dietas vegetarianas desde su infancia.  Es conocido que en algunas personas se pueden lograr mejoras evidentes en la forma en que se sienten meramente ajustando las proporciones de proteínas, grasas y azúcares. Cambiando la proporción de alimentos crudos frente a cocinados puede tener de forma similar efectos beneficiosos. Algunas personas que sienten que su salud ha mejorado después de adoptar una dieta de "zona" o "grupo sanguíneo" pueden beneficiarse de comer menos hidratos de carbono, más proteínas, etc.  Un pensamiento adicional, una funcionalidad subóptima derivada de una dieta vegetariana (o de cualquier otra dieta) puede no provenir de una deficiencia de nutrientes, sino de otras afecciones de la salud, como disfunciones digestivas, mala absorción, parásitos, reacciones inmunes adversas, etc. Para mí, estos son mecanismos mucho más probables que podrían explicar el síndrome del "fracaso en sentirse bien" observado ocasionalmente en vegetarianos y veganos. Se necesita mucha más investigación para obtener respuestas a tantas preguntas en esta esencial pero sutil ciencia.  A través del Instituto tenemos la intención de investigar si algunas de las personas que reintrodujeron alimentos de origen animal en sus dietas podrían haber logrado efectos similares alterando la selección y cantidad de alimentos vegetales.
