Esto se puede producir especialmente en la próstata, los pulmones, las mamas, el tubo digestivo. Esta célula se divide cada vez más, hasta convertirse en una masa que invade los tejidos vecinos. En un momento determinado, algunas células cancerosas se desunen para fluir rápidamente en otras partes del cuerpo. Este procedimiento se llama «metástasis». En los países occidentales, un adulto de cada tres es atacado por el cáncer. Es un aumento importante con relación a los años anteriores y se trata de una situación muy diferente a la situación dominante en los países donde los hábitos alimenticios occidentales todavía no se han extendido. El Instituto Nacional (americano) del Cáncer ha llevado a cabo un estudio para analizar en qué proporción el riesgo de padecer cáncer se debe, por una parte, a los factores genéticos y, por otra parte, a los factores que potencialmente se pueden controlar, como el tabaco, la alimentación, los rayos x, las radiaciones, etc. Según las estimaciones más fiables, del 80 al 90% de los cánceres se deben a factores medioambientales en la medida en que incluyen los hábitos alimenticios y el tabaquismo. El 30% de los cánceres se deben al tabaco, incluidos el cáncer broncopulmonar (pulmón), el cáncer de boca, el cáncer de garganta, el cáncer de riñón y el cáncer de vejiga. Además, hay casos (del 30 al 60%) que están causados por la alimentación. Los cánceres de próstata, de mama, de ovarios, de útero, de colon, de estómago e incluso el cáncer broncopulmonar (pulmón), entre los órganos más vulnerables, están relacionados con alimentos específicos que favorecen el crecimiento de células cancerosas. Algunos alimentos no son la única causa de los cánceres en estos órganos pero, asociados con una exposición a productos tóxicos, radiaciones, a una debilidad de orden genético y una vez más a otros factores, contribuyen en gran parte a éstos. Los elementos que permiten determinar en qué medida los alimentos influyen en la aparición y en el desarrollo de un cáncer son resultado de varios tipos de estudio. Los investigadores han comparado las tasas de cáncer en diferentes países cuyos hábitos alimenticios difieren mucho, como Japón y Estados Unidos. Para separar los factores alimenticios de los factores de origen genético, se han propuesto estudiar la alimentación de personas que han dejado Asia para irse a vivir a Estados Unidos y que han adoptado unos hábitos occidentales en cuanto a nutrición. También han estudiado las dietas de enfermos de cáncer y las han comparado con las de otras personas de la misma comunidad. Entonces, se ha demostrado claramente que algunos alimentos favorecen la aparición del cáncer, mientras que otros ejercen una acción protectora. Podemos utilizar estos datos para reducir los inconvenientes relacionados con estos cánceres en pleno aumento. Cuando se ha diagnosticado un cáncer, también disponemos de información sobre la acción de los alimentos sobre su desarrollo, lo que es de vital importancia cuando el objetivo de la persona atacada por la enfermedad es impedir su recidiva, liberarse de los dolores causados y aún más, reducir sus efectos dolorosos en la vida diaria. Sin embargo, sabemos mejor cómo los alimentos ayudan a prevenir la aparición del cáncer que precisar su acción una vez que se ha diagnosticado el cáncer; sin embargo, en los dos casos, se dispone de una suma considerable de datos precisos. Los tipos de cáncer que están causados por determinados alimentos son los que sobrevienen en los órganos regidos por las hormonas sexuales, ya sea la próstata, las mamas, el útero y los ovarios, y los que están relacionados con la absorción de nutrientes, como el esófago, el estómago, el colon, el hígado y el páncreas. Cuando se ha diagnosticado un cáncer, el paciente debe trabajar con su médico para fijar el mejor tratamiento individual, incluyendo el importante papel de la alimentación. Ningún médico se siente cómodo para informar juiciosamente sobre sus enfermedades a nivel de alimentación, ya que la mayoría no han recibido una formación en este ámbito.
