Lo primero, conducir un automóvil de bajo consumo (esto significa que no sea un SUV o un camión) y vivir cerca del trabajo. Lo segundo es no comer carne de res. Iré un paso más adelante que la UCS: sugiero que Ud. se niegue a comer cualquier tipo de carne o producto animal producido en una granja industrial. Voy a decirles el porqué. En 1990, cuando leí por primera vez que 10 personas podrían ser alimentadas con el cereal que alimentaría a una vaca, que luego serviría, a su vez, de alimento a una persona, me quedé impresionado. Pero esto no me hizo cambiar. La razón: si 10 personas fueran alimentados porque yo renunciara a la carne, renunciaría. Pero, pensé que si yo renunciara a la carne, esto no cambiaría nada, no tendría ningún impacto sobre nada, excepto sobre mí. Estaba equivocado. Si hubiera sabido que por cada medio kilo de carne que yo no comiera, ahorraría entre 2500 y 5000 galones de agua, habría cambiado. Es una buena idea ahorrar agua, estamos agotando los acuíferos subterráneos más rápido de lo que los reemplazamos. El más grande, el Ogallala, el cual cubre una amplia área del país desde el Medio Oeste hasta los estados montañosos, está consumiéndose a un ritmo de 13.000 millones de galones por año. Se está agotando. El Noroeste de Texas ya está seco. No se puede obtener agua de sus pozos. John Robbins señala que entre 1980 y 1990, para ahorrar agua, la mayoría de los estadounidenses eligió duchas de bajo consumo. Si Ud. toma una ducha diaria de 7 minutos, dice Robbins, y Ud. tiene una ducha de bajo consumo con un caudal de 2 galones por minuto, Ud. consumirá 100 galones de agua por semana, o 5.200 galones de agua por año. Si Ud. ha utilizado las antiguas duchas de 3 galones por minuto, calculo que Ud. habrá utilizado 7.644 galones por año. Así que con una ducha de bajo consumo, se pueden ahorrar casi 2.500 galones de agua al año. Bien. Pero renunciando a medio kilo de carne al año, usted ahorraría probablemente el doble de eso. Usted ahorraría más agua que si no se duchara durante 6 meses!. Y este es sólo uno de los impactos medio ambientales que se producirían. El actual sistema de granjas industriales es un ávido consumidor de combustibles fósiles y un prolífico productor de desechos tóxicos. Más de 100.000 animales son criados juntos en enormes establos. Estos animales no pastan hierba en el campo, como dicen los libros, de hecho ellos no pueden pastar. Los establos están repletos, son sucios, son lugares pestilentes con alcantarillas abiertas, sin pavimento y sin ventilación. Los animales no podrían sobrevivir allí a no ser por la gran cantidad de antibióticos que les son suministrados. Ahora se sabe que los antibióticos administrados al ganado son la principal causa de la resistencia a los antibióticos en las personas, esto es porque las bacterias mutan constantemente para sobrevivir en estos medios. El ganado es alimentado con grandes cantidades de maíz. En un establo de 37.000 vacas se descargan 25 toneladas de maíz cada hora. Se usan 1.2 galones de petróleo para producir el abono usado en cada media hectárea de maíz. Antes de sacrificar a una vaca, ella comerá 13 kilos de maíz al día, y llegará a pesar más de 600 kilos. Durante toda su vida habrá consumido 284 galones de petróleo. Hoy en día las vacas criadas en granjas industriales no son rumiantes alimentados por la luz solar sino otras máquinas más alimentadas por combustibles fósiles. Y ella producirá desechos. El ganado produce 130 veces más desechos que la gente. Estos residuos no son tratados y son insalubres. Reaccionan con los productos químicos y con organismos patógenos. Sobrepasan la capacidad de la naturaleza para eliminarlos. Envenenan ríos, matan peces y se introducen en el agua potable. El 65% de la población de California está amenazada por la contaminación del agua potable, producida sólo por el estiércol de las vacas lecheras. No solamente las vacas producen residuos, las granjas industriales de cerdos producen 4 veces más residuos en Carolina del Norte que los 6.5 millones de personas que viven allí. Los mares también están contaminados: 7000 millas cuadradas del Golfo de Méjico son consideradas zona muerta. Hay más impactos medioambientales. El ganado no vive toda su vida en granjas. Cuando son jóvenes, ellos pastan. ¿Dónde lo hacen?. Bien, más de las 2/3 partes de la tierra en los estados montañosos de los Estados Unidos son usadas como zonas de pastoreo. El 70% de las tierras en los bosques nacionales del oeste son de pastoreo, el 90% de las tierras de la Oficina de Administración de Tierras son de pastoreo. Esas son tierras públicas, tierras que el Presidente Clinton nunca trató de proteger. Estas tierras son pisoteadas por el ganado, compactando el suelo. Cuando llueve, la tierra no absorbe el agua. De hecho, arrastra la capa superficial formando profundas grietas y dañando el lecho fluvial. El Gobierno protege el ganado eliminando cualquier animal que pueda amenazar la zona de pastoreo. Envenenan, atrapan, entrampan, destruyen guaridas, disparan a la fauna. Destruir guaridas es, de hecho, una práctica de los agentes federales que consiste en verter keroseno en las madrigueras de animales y encender fuego, los animales jóvenes mueren calcinados en su interior. Según Robbins, los agentes matan tejones, osos negros, linces, coyotes, zorros grises, zorros rojos, pumas, zarigüeyas, mapaches, mofetas, castores, puerco espines, perros de la pradera, mirlos, garzas de ganado y estorninos usando estos métodos. Esto ocurre en tierras protegidas, ¡que fueron creadas en gran parte para proteger el medio ambiente! El dinero de los impuestos subvenciona estas actividades. Todavía no he terminado. En Estados Unidos no toda la carne que se consume viene del Oeste. Se importan, solamente de Centroamérica, más de 100 millones de kilos. Cada segundo de cada día se destruye un área del tamaño de un campo de fútbol de selva tropical para producir 257 hamburguesas. Cada vez que se destruye una parte de la selva, se destruyen preciosas variedades de fauna y flora, diversidad de vida que aun no entendemos, y que nos podría proveer de las medicinas que necesitamos para curar enfermedades. Las selvas nos proveen oxígeno, moderan nuestro clima. Cuando las selvas son destruidas, es sólo cuestión de tiempo que la tierra se convierta en un desierto. Las selvas absorben parte del dióxido de carbono que arrojamos a la atmósfera. Hemos incrementado en un 25% la cantidad de dióxido de carbono presente en la atmósfera, esto en comparación con cualquier otro periodo en el que los humanos hemos habitado el planeta. La mayor parte de este aumento ha ocurrido en los últimos 50 años. El Comité Intergubernamental del Cambio Climático, formado por algunos de los mejores especialistas del mundo, dice que el calentamiento global es un hecho. Si no se controla, tendremos ecosistemas colapsados, cosechas destruidas, desastres climáticos, inundaciones en las costas, propagación de enfermedades previamente controladas, muerte de arrecifes coralinos y nuevas plagas de insectos. Algunas de estas cosas están empezando a suceder. Los arrecifes de coral están muriendo. Plagas de insectos fuera de control están destruyendo nuevas clases de árboles. Los patrones climáticos están cambiando. Algunos lugares han sufrido drásticos fenómenos climáticos con miles de millones de dólares en pérdidas. Algunos isleños han tenido que abandonar sus islas debido a que el aumento del nivel del mar ha salinizado sus acuíferos subterráneos. El dióxido de carbono es producido principalmente por la combustión de los combustibles fósiles, especialmente del carbón, y más específicamente por nuestro ineficiente uso de los vehículos de transporte. Pero normalmente no se menciona el carburante utilizado en el mantenimiento de las granjas industriales. Como dije anteriormente, la industria ganadera es una máquina de combustible fósil, no una máquina rumiante alimentada por la energía solar, cuyos deshechos fertilizan los campos para producir más hierba que alimentara el ganado. Cuando Ud. come alubias, por ejemplo, usted usa 1/27 de la cantidad de combustible para producir la misma cantidad de calorías que usted obtiene comiendo carne. Usted obtiene las mismas calorías alimenticias produciendo sólo el 4% del dióxido de carbono de una persona que come carne. Otro hecho del que no se habla: el ganado produce casi una quinta parte del total de las emisiones globales de metano. El ganado se echa gases. Su gas es metano. El metano es realmente 24 veces más potente que el dióxido de carbono en causar el caos climático. Hay otra consecuencia importante de las granjas industriales sobre el medio ambiente: la extinción de las especies. Cierto es que las especies desaparecen constantemente. Normalmente, en la Tierra han desaparecido entre 10 y 25 especies por año. Pero en los miles de millones de años de vida en este planeta, hemos tenido cinco importantes periodos de extinciones; el último fue hace 67 millones de años, cuando, probablemente debido al choque de un meteorito con la Tierra, desaparecieron los dinosaurios. Pero ahora hay una sexta extinción, y no está causada por un meteorito sino por los seres humanos. Y esto es grave, estamos perdiendo varios miles de especies por año, quizás decenas de miles. Pensemos en los mamíferos que están en peligro, un 25% de las especies de mamíferos están en peligro. Pero las que realmente están en peligro, o ya han sido eliminadas, son las plantas, incluyendo placton, hongos, bacterias e insectos, que son fundamentales para las llamadas formas de vida superiores. Toda la vida desaparecerá si estas criaturas son destruidas. La fuerza conductora detrás de estas extinciones es la destrucción del hábitat natural, especialmente de la selva tropical.
