El propósito de mi segundo viaje, tan sólo nueve meses antes de la fecha prevista para el congreso, era reunirme con el nuevo equipo organizador tailandés y coordinar todos los detalles necesarios para completar el programa y superar las demoras administrativas que pudieran obstaculizar el éxito de nuestro más importante evento vegetariano internacional. Fui recibido de nuevo en Tailandia por Sumalee Naksuk, director gerente de Nutrition House Co. Ltd., una empresa vegetariana que produce proteína vegetal texturizada, y cuyo presidente Teeranard Chokwatana regenta dos restaurantes vegetarianos en Bangkok: el Vegetarian Cottage y el Vegeta, un restaurante básicamente vegano en el que conocí a Teeranard en un almuerzo con miembros de la Thai Vegetarian Union (Unión Vegetariana Tailandesa). Durante mi estancia en la capital asistí a una reunión con el Club Vegetariano de Bangkok que tuvo lugar en el Instituto Vegetariano Internacional de Educación Sathya Sai — cuyo fin principal es establecer carácter y excelencia humana en todas las escuelas, colegios y universidades — así como a la asamblea general anual de la Sociedad Vegetariana que tuvo lugar en la Oficina del Enviado de la Paz Mundial, donde hablé sobre los aspectos unificadores del vegetarianismo e invité a todos los miembros del público a asistir a congreso internacional en Chiang Mai. El Dr. Phichai Tovivich, Secretario General de la Oficina del Enviado de la Paz, me mostró una exhibición sobre las doce religiones representadas en el centro. Gracias a mis estupendos guías, Sumalee y su colega Dana, tuve la ocasión de introducirme en la viva atmósfera del fin de semana en Parque Cruz Roja, donde saboreé la deliciosa fruta durian y mis cocos favoritos. Otra memorable visita fue la del Mercado Flotante, donde pude realizar un placentero trayecto en barca a lo largo de los pintorescos canales mientras degustaba las irresistibles frutas que me ofrecían los vendedores flotantes por todas partes. Una comparación de las estéticamente agradables frutas y verduras, gratificantes para los sentidos con su aroma, con las artificialidades que los humanos osan llamar comida sugeriría ineludiblemente que nuestra mítica expulsión del paraíso debió haber sido totalmente auto-infligida. Para aquellos que busquen recuperar el paraíso, los mercados de fruta que tienen lugar desde principios de marzo en todas las regiones tailandesas son paraísos culturales y gastronómicos que ofrecen artísticas exhibiciones de diseños florales hermosamente esculpidos en fruta. A pesar de la fuerte influencia del budismo, cuyas enseñanzas se oponen claramente a matar y comer animales, me sorprendió aprender de Samana Naboon, un monje del templo Pathom Asoke, que los estrictos principios vegetarianos en los siete centros de la comunidad Santi Asoke a lo ancho del país son realmente notables excepciones. El saludable sentido de actividad útil, simplicidad e igualdad que observé en la comunidad me mostraron que, aparte los defectos humanos, el verdadero espíritu de los maestros budistas como Chu Hung y Chun Fang Ya de la China del siglo XVI — que ayudaron a los carniceros, pescadores y cazadores a encontrar trabajos alternativos mientras liberaban y cuidaban a los animales — sigue todavía vivo y válido. Los monjes y monjas Santi Asoke predican con el ejemplo y son vegetarianos estrictos; comen sólo una vez al día, caminan descalzos, rechazan los donativos en dinero y llevan una vida simple en condiciones austeras mientras observan una ética de duro trabajo. Además también fomentan el reciclaje y los métodos agrícolas naturales. Otras interesantes visitas y excursiones aparte de Bangkok y Chiang Mai que pude disfrutar por completo fueron un placentero crucero de cuatro horas a lo largo de los 365 km del río Chaopraya — donde hace 125 años la Reina Lucksami Tave, esposa del Rey Rama V, murió ahogada debido a que a sus súbditos no les estaba permitido tocarla bajo pena de muerte — de camino al templo Krang, que alberga a más de 300 perros rescatados que son cobijados y alimentados con comida vegetariana para perros gracias a Teeranard; el templo Wat Srimah Apho donde hay un buda yacente y también una estatua del Buda de 14 metros de altura; un campo de entrenamiento en Pattaya para niños sin hogar cuyas comidas vegetarianas son suministradas por Nutrition House Co.; el Hospital de Elefantes de Lampang cerca de Chiang Mai, regentado por su fundadora Soraida Salwala a quien entrevisté en vídeo para Care for the Wild (Cuidar lo Salvaje), que pretenden emitir la filmación en la televisión británica; el deslumbrante templo Doi Suthep dominando Chiang Mai; el Parque Natural de Elefantes dirigido por Sangduen Chaillert; más otro placentero crucero por el río Mae Ping de Chiang Mai.
