Los logros en agricultura, arquitectura y arte de los Moros, como sus excelentes sistemas de riego y los magníficos palacios de laAlhambra y el Generalife, son ejemplos elocuentes de las destacables habilidades de ingeniería que permitieron florecer la agricultura y la civilización en una época en que la mayor parte de Europa se encontraba todavía en un estado de barbarismo. Una influencia dietética civilizadora más reciente ha sido la del chef internacional formado en Francia Jean-Claude Juston, que previamente llevaba la cafetería vegetariana de la prestigiosa Escuela de Económicas de Londres. Su llegada al remoto y pintoresco enclave morisco de Mecinilla en las montañas de las Alpujarras ha impulsado el interés local por el estilo de vida vegetariano y motivado a un grupo de gente relacionada con el catering institucional a aprender la cocina vegetariana y vegana en el Centro Vegetariano L’Atelier, una casa del siglo XVI con una soberbia vista de las montañas donde Jean-Claude da la bienvenida a todo el que desee introducirse en los placeres y beneficios de la cocina verde de gourmet o simplemente saborear la comida y disfrutar de paseos vigorizantes por las montañas a un coste muy moderado. Cortar el tempeh en diez lonchas y enharinarlas. Calentar el aceite de oliva. Sofreir el tempeh y el ajo hasta que estén bien dorados. Añadir el jerez yllevarlo a ebullición. Dejarlo reposar aproximadamente diez minutos. Tomarlo con arroz o ensalada.### Pez de tierra Una antigua receta de Peñíscola, España.- Berenjenas - ajo - aceite de oliva - comino - sal y pimienta Trocear los ingredientes y freir en el aceite hasta que la berenjena cambie de color. Triturar con un tenedor o pasapure. Tomarlo caliente, como un paté, con pan.### Pinchitos morunos Para ocho o diez personas.- 200 gr. seitan - 200 gr. tofu - 200 gr. tempeh - un vaso de aceite de oliva - media cucharadita de comino - una cucharadita de paprika - media cucharadita de cúrcuma - media cucharadita de tomillo - una cucharadita de perejil picado - sal y pimienta - pinchos y pan Remojar todas las hierbas en el aceite. Añadir el tofu, el seitan, el tempeh y las especias. Dejar macerar toda la noche. Poner en los pinchos y hacer una barbacoa. Delicioso!Se pueden añadir cebollas, tomates, champiñones, calabacines, etc., crudos a los pinchos.### Salmorejo (una receta veraniega tradicional de Córdoba). Para cuatro personas. - 500 gr. de pan del día anterior - 2 kg. de tomates pelados - un vaso de aceite de oliva - dos dientes de ajo - sal Mezclar todos los ingredientes. En Córdoba, la gente no utiliza la corteza del pan ni las las pepitas de los tomates, pero si hay prisas también se pueden poner.Tomar con picatostes de pan frito en aceite de oliva, o tostado. Decorar con perejil picado y lonchas de seitan un poco sofrito o algas arame.### Aliño de ensalada alternativo (de Madrid). - un tercio de aceite de sésamo virgen - un tercio de aceite de maíz virgen - un tercio de vinagre de manzana - media cucharadita de canela en polvo - una cucharadita de mostaza entera Batir muy bien. Usar con aguacate, pepino, tomate, lechuga, manzana, mango, papaya, etc.### Patatas con setas (una receta tradicional de Castilla y León).- una hoja de laurel - una cebolla picada - dos dientes de ajo - aceite de oliva - 500 gr. de patatas - 250 gr. de setas - Ron cubano - caldo de verduras, - sal y pimienta 1. Lavar las patatas y cortarlas en cuatro trozos, rociar con aceite de oliva, decorar con la sal y las hierbas y poner en el horno caliente en la ranura superior (potencia 6) durante 13 minutos.2\. Freir las cebollas en aceite de oliva con el ajo y el laurel. Cuando las cebollas cambien de color, añadir las setas. Sofreir un poco y cubrir con el caldo. Cocer a fuego lento entre 15 y 20 minutos.
