No existen estadísticas sobre el número relativo de vegetarianos o su estado de salud y no hay nada en el sistema legal polaco para evitar que los vegetarianos sean obligados a comer carne en los hospitales, cárceles, colegios y otras instituciones o durante el servicio militar. De modo que la Sociedad Vegetariana Polaca tiene mucho que hacer. La liberalización política ha traído algunos avances prometedores, así que hay posibilidades de un progreso más rápido en el futuro. Para comprender las causas de la situación actual necesitamos revisar brevemente el contexto histórico. Antes de la Segunda Guerra Mundial, el vegetarianismo se asociaba principalmente en la mentalidad pública con un interés por la filosofía oriental y era visto como un excéntrico interés marginal relacionado con creencias sobrenaturales o esotéricas. Sin embargo, existían restaurantes vegetarianos en distintas partes del país y las ideas vegetarianas eran libremente promovidas. Después de la guerra, durante el periodo stalinista, vegetariano era sinónimo de subversivo e incluso la palabra estaba prohibida en los medios de comunicación. La literatura no podía ser diseminada y los vegetarianos estaban obligados a reunirse en privado, si no incluso en secreto. Semejante hostilidad intensa de las autoridades se añadía a la desaprobación de la Iglesia y de la gente en general, y comprensiblemente no se consiguió demasiado durante ese periodo. Sin embargo, ciertos individuos fuertemente comprometidos continuaron trabajando por la causa. Blazej Wlodarz abogó por una dieta vegetariana pura y publicó "La Cocina Sin Carne" en 1949 a pesar de las actitudes prevalecientes. Pasó sus últimos años prácticamente como un ermitaño en un pequeño pueblo cercano a Varsovia, visitado por vegetarianos venidos de todas partes y a su muerte su enorme colección de material sobre vegetarianismo y temas relacionados pasó a manos de su nieto. La enorme tarea de catalogar todo aquello todavía sigue por hacer y no es fácil de asumir para un voluntario. Makary Sieradzki fue preso político durante nueve años bajo el régimen de Stalin y en el momento de su liberación a la edad de 56 años su salud estaba arruinada. Sin embargo, mediante el yoga y el vegetarianismo recuperó la salud y continuó como vegetariano activo y comprometido hasta su muerte en accidente de coche a los 92 años. Como nuestra amiga Helen Nearing de los Estados Unidos, él estaba perfectamente sano y en forma cuando le llegó su fin. En la década de 1970 se levantó la prohibición sobre la idea del vegetarianismo y aparecieron algunas publicaciones, pero aún no era posible crear una sociedad vegetariana oficial. En 1978, sin embargo, la primera sociedad había sido creada como club social en Olsztyn por Halina Tarasowa, una talentosa lingüísta y matemática que ha seguido promoviendo la causa y tiene ahora 84 años. Posteriormente en los años 1980 el movimiento Solidaridad abrió el camino para las nuevas iniciativas y se creó en Varsovia la Sociedad Vegetariana Polaca. Fue registrada legalmente con las autoridades en 1981, pero su esfera de actividades todavía estaba restringida al área de Varsovia a pesar de contar con miembros de todo el país. Importantes figuras de los primeros días de las sociedad fueron Emilia Jakubowska, una fundadora de la sociedad, y Kazimierz Chomicz - padre de nuestra colega Krystyna Chomicz-Jung - que fue presidente de la sociedad desde 1981 hasta su muerte en 1990 a la edad de 87 años. Recientemente, con las reformas en el ambiente político, la atmósfera ha cambiado un poco para beneficio de los vegetarianos, pero todavía existen prejuicios muy extendidos. Por ejemplo, un libro reciente escrito por un conocido periodista televisivo se refiere a los vegetarianos, grupos religiosos, comunistas, feministas, portadores del VIH y otras minorías con un desprecio universal. Incluso la palabra "vegetariano" parece llevar connotaciones negativas. La única forma de asegurar la aceptación, si no la aprobación, es referirse a una "dieta sin carne", que en ese caso conlleva la idea de algo prescrito por razones médicas más que la manía de algún individuo excéntrico y subversivo. A la vista de todo esto, la necesidad de una sociedad vegetariana robusta se hace muy evidente, y las dificultades que la Sociedad Polaca ha tenido que afrontar también resultan bastantes obvias. Tradicionalmente la Iglesia Católica se ha mostrado extremadamente hostil hacia lo que ha sido considerado casi como un movimiento herético. No obstante, recientemente se han realizado algunos esfuerzos de curación mediante ayuno y dietas de frutas y verduras. Empieza con un retiro y ayuno de tres días dirigido por un sacerdote y un médico, la Dra. Ewa Dabrowska, autora de "Retorno a la Salud Nutricional". Al retiro le siguen seis semanas a frutas y verduras, que se consideran como parte del "ayuno", seguidas por una dieta totalmente vegetariana. Esto ha tenido cierto éxito y la co-autora de Krystyna, Wanda Stojanowska, ha participado en uno de ellos, pero todavía no son ampliamente conocidos y son por lo común inaccesibles para la gente en general. Sin embargo, representan un avance en términos de aceptación del vegetarianismo en la sociedad polaca. Wanda está realizando un estudio entre sus estudiantes de Varsovia para determinar las actitudes actuales. Los resultados preliminares muestran que existe un interés por el vegetarianismo entre los estudiantes, pero su conocimiento es rudimentario y tienen muy poca idea de lo que puede comerse en lugar de la carne. Se espera que la publicación de los resultados de estudios de este tipo pueda ser también una forma de crear un conocimiento más amplio de lo que implica el vegetarianismo. Las cosas van cambiando lentamente. Con la liberalización política y la supresión de al menos algunas de las barreras hacia la comprensión, la sociedad espera ser capaz de captar muchos miembros nuevos y gradualmente disipar el prejuicio cultural hondamente arraigado que todavía existe. En sus esfuerzos por promover el ideal y el estilo de vida vegetariano, la sociedad ha sido ayudada mucho por la Unión Vegetariana Alemana así como por la EVU, la IVU y muchas otras organizaciones e individuos. Los años 1990 han presenciado por tanto muchos y prometedores avances incluso a pesar de que la sociedad ha sufrido la pérdida de su sede y lugar de encuentro y la necesidad de almacenar todo su material en un sótano, donde todavía sigue mientras continúe la búsqueda de un nuevo lugar. Se han realizado celebraciones del Día Internacional Vegetariano, conferencias y encuentros y el vídeo *"Comida sin Miedo"* ha sido traducido al polaco para su uso en las escuelas y en cualquier otra parte. La revista "Mundo Vegetariano" - una publicación periódica con aspecto muy profesional que se publica desde principios de 1994 - ha organizado vacaciones vegetarianas. Algunos de vosotros recordaréis que tras el congreso de Bratislava del año pasado se lanzó una propuesta a todos los Gobiernos Europeos para reclamar la admisibilidad de una dieta vegetariana y para asegurar que una opción vegetariana estuviera disponible en toda institución pública. Este desafío fue debidamente remitido a 30 instituciones principales, incluídos el Gobierno y el Parlamento polacos. Hasta el momento, se han recibido tres respuestas. El Instituto Nacional de Alimentación y Nutrición emitió un comunicado oficial diciendo que la dieta vegetariana es segura para los adultos - un gran avance dentro del baluarte de la sabiduría nutricional nacional, aunque no llegó tan lejos como para recomendar dicha dieta para niños o adolescentes. De ser considerado por las autoridades políticas como subversivo y por la Iglesia como herético, el vegetarianismo está ocupando su legítimo lugar en el mapa cultural polaco y con la ayuda de la Sociedad Vegetariana Polaca y todos sus amigos estoy segura de que irá reforzándose. Así como esperamos que Krysztyna se mejore, también.
