#  Congreso Mundial Vegetariano 1996 - Los consumidores de carne se hacen no nacen

El deseo por la grasa se aprende, como resultado de la combinación del olor y la suavidad de estos alimentos en la superficie de la boca.   Por ejemplo, se dice que la mantequilla y los helados, se derriten en la boca. Lo que se hace comúnmente para vender algún producto, es combinar la grasa con el azúcar refinada para hacerlo más apetitoso. Esta combinación la encontramos en los postres, pasteles, dulces, galletas, y casi todos los snacks - todos son altos en grasa aunque comúnmente les llamemos "dulces"-   En esencia, el gusto por la grasa es solo un habito, creado por acondicionamiento. Con demasiada frecuencia, los alimentos altos en grasa, o "dulces", son usados como recompensa para niños con buena conducta. Dr Leann Birch, de la Universidad de Illinois Laboratorio del Desarrollo del Niño, encontró que en los países Occidentales los niños pequeños están condicionados o enseñados a que les gusten los alimentos de origen animales. Por ejemplo, cuantas veces hemos oído decir al los padres, "Puedes comer helado, si te comes tus espinacas." Inmediatamente suponen que si la nieve es la recompensa, entonces las espinacas son el castigo. Por contraste, la mayoría de los niños en China rural y Japón, que no están expuestos a estas negociaciones, sienten repulsión con solo pensar en comer animales o alimentos hechos de ellos.   Pero, Virgina todavía no estaba totalmente convencida. "Si el gusto por la grasa ya esta totalmente arraigado", preguntaba, "que puedo hacer con mis hijos?" Buena pregunta. Continué explicándole que los niños mayores, e incluso los adultos , no tienen porque vivir la adicción a la carne o productos lácteos por el resto de sus vidas. Durante mis 35 años de practica clínica, he visto a muchos padres, e incluso abuelos, de niños en mi clínica cambiar a una dieta basada en alimentos vegetales. Comúnmente esto sucede después de haber encontrado un nivel alto de colesterol en uno de los hijos y después de descubrir que esto forma parte de un patrón familiar.   Estudios clínicos parecen confirmar las experiencias en mi clínica - el gusto por la grasa y productos animales puede cambiarse en poco tiempo. El Dr Richard Mattes, un investigador del Centro de Sentidos Químicos Monell en Filadelfia reportó en 1993 que cuando loas alimentos grasos eran reducidos drásticamente o raramente consumidos, el deseo por ellos declinaba, o hasta desaparecía totalmente, después de 8 a 12 semanas. Una advertencia; también encontró que si continuaban consumiendo cantidades moderadas de alimentos altos en grasa ya sea como entradas o condimentos, el gusto por la grasa persistía.   Más evidencia clínica viene del Centro de Investigación de Cáncer Fred Hutchinson en Seattle, que estudió a 448 mujeres participantes de un programa para reducir la grasa de sus dietas. La mayoría dijo que mientras estuvieron en el programa, que duró varias semanas, perdieron su gusto por la grasa. Al volver a los alimentos grasosos al finalizar el programa les causó molestias físicas a la mayoría, aunque hubieran perdido el gusto por la grasa o no.   Se les dio "Cuatro Etapas para la Dieta Ideal" (ver emisión de Diciembre 95 Nutrition Advocate para detalles mas completos), a Virginia y a su familia para usar como guía al hacer las compras de comida o al cocinar. Una vez que la familia llegue a la Tercera Etapa, consistiendo de vegetales, frutas, granos integrales, y legumbres, con solo ocasionalmente el consumo de carne y productos lácteos, ya estarán en el camino hacia domar su gusto por la grasa. Para cuando lleguen a la Cuarta Etapa (sin carne o productos lácteos) lo perderán por completo. Ojalá, que los nietos de Virginia no necesiten de estas transiciones. He visto a bebes en la "Cuarta Etapa" que nunca tuvieron que preocuparse de las Etapas uno a la tres!   Mientras niños y adultos saludables parecen necesitar estos cambios graduales de dieta, adultos con enfermedades cardíacas, ataques, u otros desordenes relacionados con la grasa, pueden ir directamente a la Cuarta Etapa sin ningún problema. Dr Dean Ornish ha descubierto que para sus pacientes es más fácil lograr una dieta totalmente basada en los alimentos vegetales cuando se hace repentinamente, sin tener que primero tratar de reducir moderadamente la grasa. Porque cuentan con el incentivo adicional de la seguridad que esta dieta les dará ganancias positivas a sus salud - niveles de colesterol mas bajos, perdida de peso, y una reducción enorme de los riesgos de muerte por enfermedades cardíacas y cáncer - que no podrían obtener totalmente al seguir consumiendo cantidades modestas de grasa.
