Soup with Corn
Here's one, if you can find quinoa. I love this one.
Rinse quinoa well in a fine strainer.
- 1 (14.5 oz) can vegetable broth
- 1/2 c quinoa, rinsed and drained
- 1 3/4 c water
- 1/4 tsp cayenne pepper
- 2 cloves garlic, minced
- 1 c frozen or fresh corn kernels
- 1 1/2 Tbsp chopped parsley or cilantro
- 1 Tbsp fresh lime juice
Place broth, quinoa, water, cayenne and garlic in a small soup
pot and bring to a boil.
Reduce heat to medium and cook 10 minutes.
Add corn kernels and cook 3 minutes.
Add parsley or cilantro and cook for 1 minute.
Remove from heat and stir in the lime juice.
Serve hot or cold.
