Energy Bars

Recipe By : Vegetarian Times; Serving Size: 10

  • 1 1/2 cups granola
  • 1/2 cup spanish peanuts
  • 1/2 cup miniature m&m candies
  • 1/2 cup dried currants
  • 1 cup dried prunes
  • 1/2 cup dried apricots
  • 1/4 cup dried blueberries
Line a baking sheet with wax paper.
Set aside. In a large bowl, combine granola, peanuts, candies and currants.
Set aside.
In a food processor, combine prunes, aprictos and blueberries.
Process until smooth.
Add processed fruit to granola mixture.
Mix well.

From about 1/3 cup mixture into a tightly packed 4- by 1 1/2- by 3/4-inch bar.
Place bar on prepared baking sheet.
Repeat with remaining mixture.
Let bars air-dry overnight on the counter.
Store bars in airtight container between sheets of wax paper.
Makes 10 bars.

Helpful Hints:
Substitute miniature chocolate chips for M&M's.
