Have you ever tried chickpea salad? Its great in whole wheat
pita bread with lettuce and/or sprouts.
- 1 can chickpeas, drained and mashed to a chunky consistency
- 1 stalk celery, chopped
- 1/2 green pepper, chopped
- 2-3 Tbls nutritional yeast
- salt and pepper to taste
- 1/2 tsp onion powder
- 1/4 tsp garlic powder
- 2-3 Tbls vegan mayo (see IVU recipes)
Mix everything together and stuff in a pita or on bread as a sandwich.
You can also scoop it onto plate lined with salad greens.
