Smashed Beans

Use for bean nachos, tacos, burritos, casseroles, and dips.

  • 2 cups pinto beans
  • 8 cups water
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 to 1 cup salsa (mild to spicy, your preference)
Soak beans overnight, drain and rinse.
place beans in the water.
Bring to a boil, cover, reduce heat and simmer for 3 - 4 hours.

Drain reserving the cooking liquid.
Mash the beans using a hand masher, beater, or food processor.
Return to pan.
Add the spices, a little of the reserved liquid and the salsa, stirring until the beans have a softened, smashed consistency.
Heat through to blend flavors.
