- 1 cup walnuts or pecan, chopped in a blender
- 2 tablespoons margarine
- 1 small onion, chopped
- 2 tablespoons flour
- 3 tablespoons silken tofu
- 1 tablespoon applesauce
- 1/3 cup vegetable broth
- 2 cups fresh breadcrumbs
- 1/4 teaspoon (or more!) thyme
- salt and pepper to taste
Mix tofu, applesauce and broth together.
In a frying pan,sauté onion in melted butter until tender.
Stir in flour, then add tofu-applesauce-broth mixture. Cook until
thick. Add other ingredients.
Shape into 8 cutlets. Pat with a little flour, then fry in hot
vegetable oil until browned on each side.
