& Potato Stir-Fry

Here, chopped spinach and diced potatoes make a very tasty combination.
Fresh green peas can also be added to the above vegetables.
They can be made as a side-dish to be eaten along with rice or rotis.
Keep a medium-sized skillet on heat, add 1 tblsp olive oil.
- 1 cup chopped spinach
- 2 medium-sized potatoes - diced
- 1 small green chilli - minced
- ¼ tsp mustard seeds
- ¼ tsp cumin seeds
- ½ tsp black gram ( usually called 'urad dal' , available
in Indian stores)
- 1 tblsp olive oil
- 1 tsp salt
- ½ tsp dessicated coconut powder
- cilantro leaves
When the oil becomes hot, add mustard seeds.
When they are done, add minced chilli, black gram and cumin seeds
and fry for 1 minute.
Now, add the chopped spinach & diced potatoes and cook for 4 minutes,
until the potatoes become a little brown.
Put salt and coconut powder and mix well.
Cook over low heat for another 15 minutes until the vegetables are

Serve hot with rice or rotis.
