Potato, Peas and Turmeric Salad
from Asha Kumar - Detroit, Michigan, USA

Once again, here's an another mouth-watering dish using Potatoes.
Yes, it sure is one of my favorite vegetables!
This salad, as all salads listed here, is easy to make and tastes delicious.
It is made using boiled potatoes and green peas (canned or fresh).
The dish has a distinctive yellow color which is due to turmeric - this spice is used in lots of Indian dishes for its color and its unique flavor.
Just try it and let me know your comments.

  • 3 medium-sized potatoes - washed
  • 1/2 cup canned or fresh green peas
  • 2 tsp salt
  • 2 small green chillies - minced
  • 1/4 tsp mustard seeds
  • 1/4 tsp black pepper
  • 1/4 tsp turmeric
  • 2 tblsp vegetable oil
  • 10 - 12 cleaned and cut cilantro leaves
Boil the potatoes in a saucepan until they are soft.
Remove their skins and mash them thoroughly in a serving bowl.
Add the fresh peas and salt and mix well.

Keep a small skillet on heat and add 2 tblsp vegetable oil.
When the oil becomes hot, add mustard seeds.
Keep a lid handy since the seeds tend to sputter and pop.
Then add green chillies, pepper and turmeric.
Remove from heat and add it to the salad.
Garnish with cilantro leaves and serve chilled.
