Green Onion Sabzi
from: 'Maithili' from Gaithersburg, USA.

Serves : 2

  • 18 Green or Spring Onions (3 bunches)cut in 1/2 inch pieces
  • 2 medium potatoes cut in 1/2 inch cubes
  • 6 cherry tomatoes halved
  • 1 tsp mustard seeds
  • 1/8 tsp turmeric powder
  • 1/2 tsp chilli powder or more to taste
  • 2 Tbs oil

Heat oil in frying pan or wok, When oil is heated add the mustard seeds.

When mustard seeds crackle add the vegetables.

Saute for 1 minute and then add chilli powder and turmeric.

Saute for 5 minutes.

Add 1/2 cup water and cover until potatoes are tender.

Cook off excess water.

Serve with Khichdi.
