This recipe takes minutes, an easy way to use up old cooked rice.
It is easily adapted to whatever vegetables you have on hand. Serves
- 3 cups cooked rice
- 2 cups sliced mushrooms
- 1/2 cup frozen peas
- 1 medium sliced onions
- 1 tsp chopped ginger
- 1 tsp chopped garlic
- 1 tbsp oil
- 2 bayleaves
- 1/2 tsp turmeric
- 1/2 tsp chili powder/cayenne pepper
- 1/2 tsp garam masala/curry powder
- salt to taste
- Optional garnishes: lemon wedges, chopped cilantro
Heat oil in a wok.
Fry the bayleaf, ginger, garlic, onion for 2 minutes.
Add turmeric, chili powder, garam masala and fry for a few seconds.
Add mushrooms and peas and stir fry for 2 minutes.
Add rice and stir fry till heated through.
Add salt to taste.
Garnish with chopped cilantro and lemon wedges.
