Sauté onion and garlic until onion is soft. Add curry powder,
sauté a few more minutes. Add coconut milk, chickpeas, and potatoes.
You can also add about 1/2 cup frozen green peas if desired. Let
simmer for 45 minutes to one hour, until potatoes are soft.
- 1 onion, diced
- 1 tablespoon garlic
- 1 tablespoon curry powder, or to taste
- 1 can coconut milk
- 1 can chickpeas
- 2-3 regular potatoes, depends on size
