This is my family's favorite soup.
I make it often when the weather gets cold.
- 1 1/3 cup lentils
- 1 cup chopped onion
- 1 stalk celery, chopped
- 1 medium carrot, chopped
- 2 garlic cloves, minced
- 5 cups vegetable stock or water
- 4 tsp. soy sauce
- 1 or 2 bay leaves
- 1 tsp salt
- 1/2 tsp basil
- 1/2 tsp thyme
- 1/2 tsp oregano
- 1/4 tsp ground pepper
- 1 cup chopped tomatoes
Cook lentils in stock for 30 minutes.
Meanwhile, saute veggies until softened, add spices and cook another
minute or so.
Add veggies to lentils and simmer for 1 hour.
Add tomatoes in the last 5 minutes of cooking.
