Lentil Soup 2

I made a lentil soup the other day which was really good and simple:

  • 1/2 cup lentils
  • 2 1/4 cup vegetable bouillon
  • 1 cup of carrots
  • 2 sticks of celery
  • 2 tsp of vegetable oil
  • 1 medium onion
  • 1 clove of garlic
  • 1 TBS parsley
  • 1 bay leaf
Put the above ingredients in a pan and simmer, covered until the lentils are tender (1/2 hour?).
The above vegetables can be substituted or added to with some of your favorites.
This turned out to be a very satisfying and delicious soup.
