1 1/2 cups drained canned chick-peas
1/4 cup water
3 tablespoons lemon juice
1 tablespoon tahini (sesame-seed paste)
1 teaspoon olive oil
3/4 teaspoon garlic powder (I prefer to use fresh cloves)
1/2 teaspoon ground cumin
pinch of ground red pepper
1/2 cup chopped coriander leaves (cilantro)
In a blender or food processor, puree all ingredients, except the coriander leaves, until smooth.
Transfer to a bowl.
Stir in coriander leaves.
Yields 1 1/2 cups.
