This uses canned tomatoes so you can enjoy the summer fresh taste any time of year.
- 3 (14 ounce) cans petite diced tomatoes
- 1 (4 ounce) can chopped green chilies
- 2 garlic cloves, minced
- 2 cups diced cucumbers, peeled and seeds removed
- 1 cup diced celery
- 1 cup diced green onion
- 1 tablespoon chili powder
- 2 tablespoons red wine vinegar
- 1/4 cup extra virgin olive oil
Combine all in large bowl.
Using immersion blender, blend to desired consistency. Or using regular blender, place half of ingredients in blender, blend and return to remaining ingredients.
