Watermelon and canteloupe are in aboundance here right now and
one of the small farmers I do business with here had a good price
on them so I bought a few of each since I love both of these fruits.
Here's something I threw together (It's an orginal!) that went to
a get together with me and was a huge hit.
You might feel like adding some honeydew melon in or use any combination
of melons you want.
1.Bring orange juice, cinnamon, and ginger slices to a boil over medium
- 2 C. fresh squeezed orange juice
- 2 slices of ginger
- 4-6 C. of mixed melon balls or cubes
- pinch of cinnamon (optional)
- 1 1/2 T slivered fresh mint.
Continue to boil until juice reduce to 1/2-3/4 of it's original amount.
Remove from heat and discard ginger slices.
2. In a shallow pan arrange fruit and pour juice over.
Chill for at least 2 hours to overnight.
3.Transfer fruit to a serving bowl.
Pour juice over the top and garnish with slivered mint.
