Hot Ass Beans
from: Mary Mansour - Point Clear, Alabama, USA

Off the top of my head....can serve up to 20 or can be saved for a week in the fridge....cooking time is from 2 -4 hours...

  • 1 package dried red or pinto beans
  • 3-7 chopped fresh jalapenos
  • TBS garlic powder
  • 1 TBS salt
  • 1 tsp. pepper
  • 1 medium chopped bell pepper
  • 1 medium chopped onion
  • (you may add mushrooms or other chopped veggies according to taste)

Put beans, jalapenos, onion, salt, pepper and garlic powder in large bowl cover with water and soak overnight.

After overnite soak, add enough water to thoroughly cover beans.(Do not emtpy water from overnite soak).

Add bell pepper and other veggies.

Heat to boiling and then simmer until beans reach desired tenderness.

Serve with salad and corn bread.

May be used with any type of dried beans as well as rice.
